Gridiron Grub: Gearing up

This has been an odd year to be a football fan. With college football ending last January and the NFL lockout lasting through the summer, sports fans have heard incessant talk about the sport but seen very little of it until the last few weeks of preseason games. Because of this, I was ecstatic that I was able to spend last Saturday at the home opener for the Penn State Nittany Lions. I am from Northeast Pa. and Saturday pilgrimages to Beaver Stadium are practically a birthright. The early morning wake-up; the drive through pristine mountains and countryside until the stadium appears on the horizon; thousands of tailgaters sharing food, drinks and stories…..there is nothing quite like it.

Tailgating was in full swing at 9am, the university band was blaring, crowds were cheering and even the first kick-off was returned for a touchdown. There was really only one thing missing at last week’s game: fall weather. At kickoff the temperature was peaking at 90 degrees and felt even hotter with 100,000 of my closest friends packed around. Besides an opening day win, the only thing that made the heat easier to bear was the vendors climbing up and down the stadium stairs with water and fresh-squeezed lemonade for sale. Which got me thinking.

Cocktail O’Clock: Rum ‘n’ Coke ‘n’ Cream

With summer coming to an unofficial close this weekend we’ve decided to make one more ice cream cocktail.

We’ve done beer and bourbon with ice cream, vodka and root beer with ice cream, even champagne with sorbet. So why not rum and ice cream?

Even better, this one’s a one-two-three cocktail recipe that’s easy enough for lazy labor day drinks.

Spider Cocktail

2 parts Sailor Jerry Rum
1 scoop (vanilla) ice cream
Coca-Cola

Method: add rum to a highball glass full of ice, drop in a scoop of ice cream and top with cola. Have a straw on hand for overflow.

Cocktail O’Clock: National Rum Day

August 16th is Nacional Dia Del Ron, which roughly translates to: “no better time than the middle of August to take off work early and celebrate a made-up drinking holiday.” Works for us! Start your National Rum Day with this Panamanian rum cocktail.

The Panamanian Soother:
(Makes 8-10 drinks)

1 1/2 cups Ron Abuelo Añejo
1/2 cup fresh orange juice
1 oz agave nectar
1 pack blueberries
12 sage leaves
2 bottles ginger beer (Barritts’s or Regatta)

Directions: In large pitcher, muddle the berries and thyme together. Then add remaining ingredients with ice and stir very well.

Now that we’ve been blending and freezing poptails for a few weeks we decided it was time to open up the….er bar, and put your requests to work.

First up is the Mai Tai.  Poor Trader Vic, here is yet another iteration on his classic creation. We figured everyone has been getting bastardly with his drink, that well, we need one to claim as our own.

We started with a Maui Mai Tai, from there we stayed true to keeping our poptails budget friendly by skipping the orgeat and kicking up the sweet and sour combination by going au natural with some fresh fruit. What we didn’t skip: the rum, more accurately, the three rums.

Mix. Lick. Enjoy.

Endless Poptails: Watermelon Mojito Popsicles

Tweaking a trend can either make you a hero or a target. Luckily, we ESers are a hardy bunch — so yeah, we’re gonna mess with the beloved Mojito by freezing it.

But before you go bucking it, let us say that from sip to lick the frozen Mojito can confidently double down over its fluid counterpart and take you from cool to sublime faster than you can say freeze! Finally: Peanut Butter and Jelly for Grown Ups

There are many people who believe peanut butter belongs on bread and bread only. As someone apt to eat peanut butter with a spoon (or a shovel) I couldn’t disagree more. And ever since I found out about hot peanut buttered rum, I’ve been angling for more ways to enjoy the taste of peanut butter with my booze.

So while we’re not generally big fans of all those pointless “day of” days here at Endless Simmer, I can’t resist celebrating “National Peanut Butter” day with this recipe sent over by Gianfranco of the Tippling Bros mixology team. Without using any actual Skippy, it  recreates the taste of a grade-school PB&J inside a martini glass.

Peanut Butter and Jelly Cocktail

Peanut syrup

1) Combine 2 parts water with 2 parts sugar in a pot

2) Bring sugar water to a boil

3) Add 1 part minced peanuts

4) Simmer for 10 minutes

5) Strain to remove peanut particles
