Super Snacks: Baked Garlic & Swiss Cheese Dip

Ugh…. no Seahawks, no Saints, no Chargers, no Cowboys, no Texans… remind me again WHY I want to watch the Superbowl this year?!

Oh yeah, duh–the day-long bounty of indulgent dips, deep-fried apps, and beer. That’s right.

I love football and I love TV, and obviously I love cooking, eating, and drinking, so it should come as no surprise that Superbowl is one of my favorite days of the year. For me, it’s not a true celebration unless there are copious amounts of chips and dip involved. There is no other day in the year when dip gets the respect and attention it deserves. So when my friends at Kashi sent me some of their newest products and asked if I could dream up a delicious Superbowl recipe incorporating their tasty new garlic pita chips, of course I was more than eager to comply.

What goes better with garlic than more garlic? I was inspired by one of the best soups in Seattle, the amazing, rich garlic swiss soup at Hopvine, which was my fall and winter staple when I lived there. This is kind of a fondue version of that idea–a thicker, cheesier, more amped-up version that is straight-up addictive. I used elephant garlic because it adds a sweeter, mellower taste than regular garlic and mushes up nicely, but if you can’t find it in your area, no sweat. Just roast 3 large cloves of normal garlic and you’ll be fine.

Super Snacks: Poutine Potato Skins

At Endless Simmer we’re a little obsessed with all thing poutine. We eat it for breakfast, lunch and dinner. We haven’t figured out how to turn it into a dessert just yet (any ideas??) but breaking news…we now have poutine as a handheld appetizer.

The idea for poutine potato skins came when I saw that Mile End — the champion of our tour de poutine — was offering these as a take-out Super Bowl snack. I made my version for Super Sunday as well, but I’m pretty sure they make sense for March Madness, too. Or St. Patrick’s Day. Or Easter Sunday. Or a random Monday morning.

These aren’t actually so different from regular potato skins; you’ve just got to pair the spuds with gravy and cheese curds, the other two elements of the holy trinity that make up poutine. The biggest hurdle, of course, is finding fresh cheese curds. In New York, I tracked them down at Saxelby Cheesemongers. For the gravy, I decided to go a little more American than the dark gravy usually found on Montreal poutine, and went with a white bacon gravy. Since I had to cook up bacon strips to produce that gravy, in the end I crumbled them up and added that to the top of the skins as well, because…yeah, I don’t have to explain myself there.

A Different Type of Super Bowl Grub

Never afraid to objectify women, PETA’s latest campaign for an animal cruelty-free world certainly plays up the old notion that certain vegetables look just like men’s certain private parts.

Super Bowl Breakfast Of Champions

With all of the nacho cheese concoctions, mini burgers, and bacon cupcake recipes floating around for super bowl Sunday, I think we’re still missing something: super bowl breakfast. You can’t start a day of eating as many calories as a linebacker without a nice hearty breakfast. My thought process was as follows: super bowl…beer…beer bread…eggs…sunnyside up egg on beer bread toast…touchdown! With this little number, you can have your beer right when you wake up on Sunday morning, and no one can say, “Um, isn’t it a little early to start drinking?” No, no it’s not, because I’m making breakfast. I win.

Beer bread it one of the easiest breads to make because you don’t have to knead it or let it rise or mess with yeast. If you don’t bake, don’t worry. If you can use an oven, it will be delicious.

Super Bowl Grub: Pub Food Triple Play

It’s no secret that I’m a fan of bar food, my waistline can attest to that. However, the biggest conundrum I encounter when I find myself seated atop a bar stool with a pint of beer is what to order — there really are so many great choices. Chicken tenders, nachos, potato skins, how to choose!

From time to time I’ll have a light bulb moment and with what I’m about to tell you is, I think, one of my best light bulb moments ever, and just in time for the Super Bowl.
