The Endless Road Trip: Now That’s a Biscuit

We’ve mentioned The Reggie on Endless Simmer before, but no discussion of Portland food would be complete without a look at the ultimate breakfast sandwich: a giant buttermilk fried chicken breast layered with bacon, melted cheddar cheese and a runny fried egg, the whole thing placed between two fluffy biscuits and slathered in hearty white gravy. It’s just effing perfection.

The Endless Road Trip: Put Some Ink on It

These days, you don’t have to look far to find people serving their French fries with craziness like duck fat or rosemary salt or balsamic ketchup. Yes, the most plebeian of foods has gone gourmet. And not surprisingly, Portland wins this contest.

Foster Burger in SE Portland serves their perfectly-sized, crispy “black and white fries” with: died garlic, truffle oil, parmesan, and, for dipping..black squid ink aioli. Yes, these spuds are dipped in seafood spray. Brilliant. Ridiculous. Also, tasty.

Friday Fuck-Up: Way Too Fiery Chicken

Editor’s Note: Bringing a bit more West Coast flavor to the blog, please welcome L.A.-based food fanatic Katt Kasper to the ES family.

Alright. It’s finally Friday and all you want to do is make it to the end of this brutal workweek without going postal on one of your coworkers, or (dare you live the dream?), your boss. So there you are, trying to forget the week, eating that ‘special’ meal in your favorite restaurant and you think to yourself, “How did they make this sauce sooooo velvety and smooth? And what’s that back taste? White pepper and thyme in heavy cream and butter, or it that a traditional roux?” I mean, how do you solve this puzzle without enrolling at the Cordon Bleu or bribing the chef? I’ve got the secret. There’s this thing called (are you ready?), the INTERNET. And it’s all there, baby. Shopping lists, cooking techniques, recipe breakdowns, how-to cooking videos…it’s endless! And I’m not talking about easy things like tomato based spaghetti sauces, or a thousand different ways to cook the perfect hamburger. What I’m talking about is a dish that you know nothing about but has rocked your world and somebody already knows how to make it! So let’s try it.

I started writing this piece while I was out of town on business in Oakland, California and I was taken into the town of Alameda to eat at a Burmese restaurant called Burma Superstar. Now I like my food spicy and hot and I wasn’t disappointed when I ordered their “Fiery Chicken with Tofu” which was a wok tossed chicken breast cooked with tofu, string beans, red bell peppers, and basil in a five spice hot and sweet sauce. When I ordered it I said “Heavy on the fire!” and I received mixed looks of horror and concern from the wait staff. When my plate arrived it looked awesome, and the pungent chili vapors made my vision blurry and nose run even before I took my first bite. Man, was it good! Spicy, savory and (as I unfortunately found out the next morning), hotter going out than coming in. THIS was a dish that I needed to learn to make!

The Endless Road Trip: Salt and Straw

We’re no strangers to crazy ice cream flavors here at ES, and let’s be real—in this brave new dessert world where salted caramel sundaes and olive oil ice cream have become the norm, a chef putting something insane inside your cone is not really newsworthy. HOWEVER, when I heard there is an ice cream shop in meat-mad Portland serving bone marrow ice cream, clearly I was there in a New York minute.

The bad news: Salt and Straw did not have the bone marrow flavor in stock on the day I visited, but really for the very best reason possible: they were waiting for cherry season to start, so that they could make a bone marrow-black cherry ice cream. Obvi.

The good news: I had enough friends with me to order up a smorgasbord of outrageous flavors: honey balsamic strawberry with cracked pepper, sea salt with caramel ribbons, coffee-bourbon, blue cheese and pear (!), honey-lavender, blood orange, and blueberry with key lime marmalade. All head-over-heels amazing. the sweet-and-savory balsamic-strawberry-pepper took top honors for me.

Pot of chicken liver mousse from the delightful “head-to-tail” restaurant Salty Sow in East Austin.

Topped with apple geleé and served with crostini and pickled onions, this is one heavy-duty appetizer (despite the fact that it melts like butter on your tongue). I think part of the reason I loved it is that it strongly reminded me of our legendary ES Philly food fantasy, duck in a pot.

Fast Food Copy Cat: Cherry Berry Chiller

Sometimes people unintentionally plant seeds in my brain. I have a sweet friend who is mildly obsessed with McDonald’s Cherry Berry Chiller and gets it on the daily. She mentioned it to me a total of 15 times last time I saw her.  So…now I’ve been obsessing. In my mind.

If you know me at all, you know I am not that into fast food, so I thought I’d make one myself. You know what? I think this is the first thing that I couldn’t just Google and make. So, I went to McD’s website and found that their chiller is made with such lovely ingredients as flavor concentrates, citric acid and xanthan gum. Sounds yummy, huh? Don’t even get me started on the calorie and sugar count. I could go on all day…

But I won’t. I will, however, present you with a fresh, homemade and all (OK, mostly) natural Cherry Berry Chiller! Get into it, y’all.

The Endless Road Trip: Porklandia

Portland, Oregon may seem like the type of hippie-dippie place that knows its silken tofus from its seitan (and it is). But as I recently discovered, these hipsters also know their swine, from head to tail. Oregon is a serious pork-producing state, and Portland chefs get crazy/creative with pig parts of every variety. I ate my way through Porklandia so that you don’t have to.

At Tasty n Sons, nearly every dish, from salads to kimchi to chicken, comes with an egg on top (as god intended). It climaxes with this perfectly golden-brown, intensely crispy fried pork cutlet, served over spinach, with a soft fried egg for a crown.

The Woodsman Tavern is the first place I have ever been served a ham plate and then told the proper order in which to eat the hams, as if this was a fancy wine tasting—from most delicate to heartiest. Each one was prosciutto-thin, but with the full salty taste of a good ol’ Virginia-style baked ham.

Don’t forget the ears! At Whiskey Soda Lounge, a casual spot from acclaimed Pok Pok chef Andy Ricker, they’re stewed in 5-spice and deep-fried until crisp, served with a black vinegar dipping sauce. They’re crusty on the edges and chewy in the middle, with the texture of…well, ear.
