This is what my friend told me he added to his online dating profile after meeting too many women who didn’t eat meat. I don’t know what’s worse; the fact that these women exist or that he kept meeting them. Regardless, I found a place he should probably take women on dates.

I walked into Imig’s Kitchen and Bar in the Lafayette Hotel & Swim Club expecting run-of-the-mill breakfast that you so often get in a hotel restaurant, even if it was in San Diego. I was pretty tired and haphazardly ordered the braised pork and applewood smoked bacon hash (above), which the menu told me contained the hash, plus poached eggs, chile de arbol, and hollandaise on a crispy corn tortilla. My lovely dining companion, BS, went with the breakfast sammy: grilled country bread, eggs over easy, arugula, avocado, prosciutto, oven roasted tomatoes, fontina and chive pesto:

Endless Ice Cream: Coffee-Maple-Bacon

My house in the summer gets disgustingly, unbearably hot. I once clocked 96 degrees in our living room. This means the oven pretty much gets a three-month vacation starting in June. However, no air conditioning can be the mother of invention. I’m forced to grill everything (I’ve made pizza, soup, bread, even lasagna on the grill), or get creative with no-cook and make-ahead recipes. This ice cream is in anticipation of those sticky, crabby mornings where it’s so hot I dream about moving to Alberta.

Whole bean coffee is steeped in cream, then cooked into a custard base. Maple syrup is whisked into the chilled custard. Then after it’s churned you fold in some pre-made chopped, candied bacon.

So there you have it: coffee, bacon, eggs, and maple syrup. Ice cream breakfast. If you’re lucky enough to have air conditioning, make pancakes and scoop this on top of ’em. I guess I’ll be tinkering with cast iron skillet pancakes on the grill.

Once upon a time, veggie burgers were merely a last-resort option for lonely vegetarians at BBQs or meat-centric restaurants that didn’t have a single other flesh-free entree. As we know, they’ve come a long way since then. Now, faux burgers are less likely to be be a poor man’s meat substitute, and more often something inventive enough that even a human carnivore would want to eat.

Sugar + Bacon = Pig Candy

Over on the ES Facebook page, we got a request in for a pig candy recipe. Well, ask and yea shall receive, ES-ers. Especially if it involves bacon and dessert. And yes, we will be putting this in ice cream later this week. Obviously.

1. Preheat the oven to 375F. On a foil-lined rimmed baking sheet (the sugar gets real messy) place the bacon strips about an inch apart. With the back of a spoon, press a tablespoon of brown sugar onto the top of each bacon strip. Now this is just your most basic recipe. To embellish it is really simple, just whisk the brown sugar with a little of whatever you want: cayenne, curry, ground anise, cinnamon, cocoa powder, black pepper…you get the idea.

To be honest, I went to California with a mission to eat the best and craziest tacos I could find, and I like to think I succeeded. I won’t argue that scrambled eggs and pork belly are both awesome inside a tortilla, but I’ve definitely found the best breakfast tacos, ever.

I’ve already expressed my love for R Gang Eatery after they served me the <best tater tots ever>. But you know, after BS and I consumed an entire basket of fried potatoes and cheese, we just couldn’t resist ordering what sounded like the best breakfast item ever: pacos. That’s right, pancake tacos.

Pimento Cheese, Sriracha, Bacon. Enough Said.

The folks at Noble Pig in Austin, Texas—home to one of Endless Simmer’s Best New Sandwiches of 2012—wrote in to let us know they’ve upped the ante for the 2013 race by creating a cheese sandwich that makes even our wildest grilled cheeses look downright tired.

Yep, it’s a pimento cheese sandwich, with, you guessed it…bacon. And they were kind enough to share the recipe for the sriracha-spiked pimento cheese that makes this thing golden.

Sweet Potato, Butterscotch, Bacon and Goat Cheese Quesadilla

I am so excited about being here I can hardly contain myself!  Endless Simmer is one of my favorite blogs.  I mean, come on, chocolate peanut butter bacon strips?  There’s no turning back now, people.

But let’s talk about my latest food fixation. The humble sweet potato.

Oh, it doesn’t look like much, but any fitness blog or magazine will tell you it is a nutritional powerhouse (which is like the coolest word ever invented). Nutrition aside, this baby is tasty.  It’s sweet and savory at the same time and that is my jam.

I’m also eating a lot of butterscotch chips these days. How good are those? So that led me to the obvious idea of combining the goodness of salty bacon with the richness of goat cheese, plus the sweetness of butterscotch and sweet potatoes (I’m kind of into weird food combinations…can  you tell?).

The butterscotch brings out the sugary side of the spuds, and the bacon and goat cheese play up the savory notes (think sweet potato pie with bacon and goat cheese). Basically, this quesadilla will blow your mind and tickle all corners of your taste buds.  Wait, do taste buds have corners?  I’m pretty sure they are round, so maybe not.  Metaphorical corners, then.
