Eggs, Meet Winter Squash

Back in the summer I finally figured out a way to bring my egg obsession with me to work for lunch. I’d quickly mix eggs in a mini casserole dish, and then throw in whatever pre-cooked veggies and cheese I had on hand. Then bake.

But once zucchini and eggplant had vanished from the market, I thought I would have to hold out until the warmer months were once again upon us. Well, that was dumb.

Winter squashes work equally as well and bring a whole new flavor (thicker, creamier, deeper) to this quick egg dish.

Acorn Squash Frittata

Whisk two eggs in something small and oven-proof, mix in roasted acorn squash, queso fresco, herbs de provence, salt and pepper. Bake at 375 for maybe 20-30 minutes, totally depending on your oven. I’ve recently noticed that mine SUCKS. It’s probably better that I never write exact recipes, because I’m sure my oven-ness would be way different than yours. I’d under-cook this if you want to warm it up in the microwave at lunch the next day (otherwise you’ll have not so appetizing dried out eggs, maybe even Friday Fuck-Up dry eggs).

It will be hard to not eat this for dinner. So make something good.

Gansie is Rubbing Off on Me

The day job brought me down to D.C. last week and I had the opportunity to put a face to the pixels, as gansie and I grabbed a hot chocolate at Artfully Chocolate | Kingsbury Confections.  It was a very nice hot chocolate — semi-sweet chocolate infused with lavender — and I really liked it despite the fact that I felt slightly ridiculous ordering a “Liz Taylor.”  The conversation was quite enjoyable, too, but I’m afraid that I came down with something while I was there.

Yep, I think I have the “egg on top” virus, and I’m pretty certain I caught it from gansie.

You can see the latest manifestation of this in the picture above.  That would be my first pass at huevos rancheros.  Normally, my attempts at cooking Mexican dishes are as good as my ability to speak Spanish.  In other words, they suck.  But if there is something I’ve learned from gansie, it’s that an egg on top of anything makes it better.  A note on the picture:  Not the best quality…you can see why Mrs. TVFF and I are on the market for a digital SLR…but I was so happy with how perfect the yolk looked on top of the tortilla that I had to take a picture.

The runny eggs were darn near perfect, and it worked well with a simple salsa (made from scratch) and fried corn tortillas.  I’m still kicking myself for not picking up some queso blanco and maybe some sort of beans (black? pinto? refried?), but I guess that just means I’ll have to try it again sometime soon.

Although this dish features a couple of fried eggs, it’s poached eggs that I’ve been messing around with lately…

My dream breakfast would probably be a few rounds of food.  And coffee.  And maybe coke.  Sometimes a bloody mary.  Never a mimosa. (Unless it’s from freshly squeezed orange juice.)

One would be an over-medium fried egg with swiss cheese on toasted, buttered rye.  It’s a given there’s salt and pepper. (Side fries.  Home fries/hash browns don’t really do it for me.)

And another round would include, in some order: sunny side up egg, avocado, cream cheese, smoked salmon.

I know.  I’m the most unoriginal blogger out there.  Well, or the most committed.  Some might call this an overkill of rich flavors. But I think the cool cream of the avocado and the tang of the smoked salmon and the saltiness of the cream cheese and the richness of the egg combine for a certain impactful (sp) bite.

Friday Fuck Ups: Only Gansie Would Call This a Fuck Up

First though, who is going to see the new Biggie movie, NOTORIOUS! Ever since I was in the movie theater viewing previews before Will Smith’s terrible/weird/depressing/dark/not holiday-uplifting movie, and saw clips for NOTORIOUS my brother and I looked at each other and said, I know what I’ll be doing January 16th.  Unfortunately, my brother lives in Jersey and we haven’t yet coordinated travel plans.  As a back up, I’ve been trying to talk 80p into it, but he says if there is no *critical acclaim* for a movie in the commercials, then that’s a surefire sign it will SUCK. But, I’m such a Biggie fan.  He was the rapper of my youth.  I was way more upset when he died than Kurt Cobain.

Not Embarrassed to Go Soft

Now I’m not all that concerned with healthy eating. I mean, I try to eat my veggies and whole grains, but it’s not as if I don’t cook with oil or butter. And I certainly don’t avoid egg yolks. Certainly never. But I do have to say that this *new* way of cooking eggs is a nod to cutting some fat out of my egg routine. I mean, it is the time of year for cute clothes and over eating and I need to prepare properly (plus I just bought these suction-cup black skinny jeans that make me think I can NEVER eat again.  Fuck!)

Well, I obviously can’t take credit for this style of egg, it’s just new to me, although I’m not sure how often I’ll be soft boiling eggs. I like the hands-off concept: place an egg in boiling water, let it steep for 7 minutes, immerse it in an ice bath, peel the shell, eat. I followed these directions. My only issue was peeling the shell. I’d say it’s fairly difficult to peel hard boiled eggs. Sometimes, if you are able to slide your finger under the membrane, it can be a breeze. But if not, chunks of egg can come off.

With soft boiled eggs, it’s that much more difficult to peel because the whole egg is very soft. There’s no give. So you have to kind of cradle the egg while trying to seduce it’s clothes off. I was fairly successful, only piercing the egg while trying to take off the final section of shell. But I can tell you, I immediately missed the taste of butter on the egg that comes with my usual method of frying it. But I did enjoy the challenge of a new way of cooking my favorite food.  I’ll try poaching, froaching and baking eggs soon.

I served the soft boiled egg with African whole wheat toast, schmeared with cream cheese and topped with some of the last tomatoes from DAD GANSIE’s late blooming garden.

How I Met Mariah Carey

dsc_5044.JPGI’m sure a lot of you are wondering how I know frequent ES commenter, Mariah Carey.  Well, believe it or not, before she became a famous singer married to a little boy, we used to work together in Houston.  Yes, this foul-mouthed Jerzy Girl spent almost 6 months working in God’s Country—with Mariah Carey.  I almost got into a wreck the first time I saw a gun-rack on the back of a truck.  Christ.  Texas.

Anyway, so I know this might sound super obvious, but people eat Tex-Mex all the time in Houston.  I just never really thought about it before I lived there.  But for like every meal, people would want to eat Mexican.  It shocked me.  I mean, going out for Mexican was like a once a week, at most twice a week, thing, not numerous times a day.  Somehow, I got accustomed to it.  And I now no longer can stomach a margarita and chili con queso dip.  I did, however, find a completely adequate substitution for my fav hang-over food, fried egg and cheese on a begal.  It’s absolutely perfect and I can’t believe I never thought to do it before.

Mommy and Mini Me Frittata

I’m not having kids anytime soon, much to the dismay, of well, no one actually. But I recently browsed the kiddie cookbook shelves, as my coworker just had a baby and no gift of diaper bags or nipple cream would do.  I had to buy her a “mommy and me” cookbook, as she also has an 11 year old daughter.  When I was over her house recently (and we made this awesome, but cheating, Indian curry veggie dish) I checked out that same book I got her.  She said she’d been using it lately, pointing out a mini frittata recipe.

When my coworker baked this with her daughter, she whipped up the egg mixture, poured it in the muffin tin and then her and her daughter dropped in the filling of their choice (they used diced turkey, which I’m torn over — deli meat and egg?!?!)

I made my fritattas for an apple picking adventure out in Virginia.  More on that later (I’m looking at you, El!) but for now, here’s my adult version.
