This time of year, my favorite way to enjoy the long, warm summer nights is a leisurely grill & chill session. Glass of rosé in hand, lounging with friends, listening to Steely Dan (yup), and waiting for the grill to warm up. Turns out Calvin’s Dad was right.

Obviously steak is a classic grillin & chillin choice, and I’m a sucker for a big steak salad. This recipe is a great way to use a slab o’ grilled steak. Every good steak salad needs some blue cheese, so don’t skimp on this ingredient – get a nice, creamy, strong blue. Don’t skip grilling/caramelizing the onions, either. Raw onions are just not the same, although some very thinly sliced red onion pieces could work in a pinch.

Endless Pairings: Negra Modelo

Mexican beer and fall-themed food. The perfect complement? Well, that’s what were determined to find out when Negra Modelo sent us a “pairing kit” to put it to the test. When presented with the opportunity to taste test, my answer is almost always yes. Negra Modelo sent us a box full of spices from The Spice House, two tulip glasses, a wooden cutting board, and a $50 Visa gift card to purchase the goods. Challenge accepted. Think of it as the at-home version of Chopped. Being seasonal food fans (mainly fall), we began planning a menu of fall foods that would highlight the spices (follow The Spice House recommendations) and pair well with a Vienna (dark) lager. Yes – a European beer style from Mexico. Here’s the menu:

  • Aged Cabot Cheese with apples, fig jam, balsamic glaze, and crostini
  • Spiced roasted brussels sprouts
  • Sweet potato puree with nutmeg and cinnamon
  • Ribeye steak with Quebec beef spice
  • Cornish Hen with bicentennial seasoning
  • Pork with bavarian style seasoning

We had a friend over and made a beer pairing tasting menu. Negra Modelo was served with the appetizer, followed by a taste of each protein with the sides. The beer and food was judged based on the flavor of each, whether the spices complemented the food, and if the beer paired well with each “course.” On to the tasting notes:

Negra Modelo (ABV: 5.4%)

Appearance: Dark caramel with a red hue

Aroma: Sweet scents with subtle scents of toast

Taste: Sweet malts give caramel flavor, biscuit flavor with light herbal and earthy tastes

Mouthfeel: Clean and crisp with lingering sweetness

Overall: A pleasant surprise, Negra Modelo provides more character than expected. While it is an InBev beer, I can forgive that if the brew offers some flavor. For a lager from Mexico, it offers the basic profile of a lager with extra sweetness of caramel and a toasty flavor as well. Tastes like it would pair well with fall foods. So here we go!

Fall TV Frenzy! Pairings for Your Favorite Shows

The arrival of fall brings us the return of many of our favorite shows. Some enjoy the comedies, the cheesy chick flick(ish) shows, and others the thrillers. Regardless of what show(s) you prefer – they’re back! Several hours will be taken away from the time you thought you had in your day as you stare at the tube losing brain cells. FOX – New Girl

A show about a girl living with a bunch of dudes (and her ex) but somehow they all get along. Crack open a pumpkin wheat beer that everyone can enjoy together and put together (or order) a buffalo chicken pizza. While some biased people out there liken beer and wings to men, there are plenty of women out there that enjoy it too. Like Jess, find common grounds and dig in.

FX – American Horror Story

Always a little creepy, and typically even more disturbing, American Horror Story merits something that will take the edge off while watching. The Séance Saison is a fall seasonal that adds fall spices to the mix to get you in the spirit. Also considering the fact that this year’s season’s theme is circus, we thought the best meal to pair with the theme would be circus food: corn dogs and some air popped popcorn.

Salt Block Root Beer Steak


You’re probably wondering what a salt block root beer steak is, and you’d be right to, because well..until now, that has definitely not been a thing.

Here’s what happened: I had two exciting new products burning a whole in my kitchen, waiting to be used.

1) My still unused Christmas present: a Himalayan pink salt block from the Meadow. Salt blocks allow you to cook foods at 600-degree temperatures, while the salt rapidly sears proteins, caramelizes sugar, and yes, adds a wee bit of salty deliciousness. By the way, this is how beautiful it looks before you get into the nitty gritty of grilling on it:

2) A bottle of McCormick Root Beer Concentrate that came my way as part of McCormick’s Flavor of Together program, a yearlong initiative to share 1.25 million stories about how flavor both unites and defines people across the globe.

So, what exactly is root beer concentrate? Well, it’s kind of like vanilla extract, except instead of vanilla it adds a dash of root beer flavor to whatever you’re cooking.

In 1889, Willoughby M. McCormick went door to door selling one of McCormick & Company’s first products, Root Beer Extract. From there, the product quickly rose in popularity and led to a trending sensation of root beer floats and root beer home brewing in the early 1900s. In 2014, McCormick marks its 125th anniversary by celebrating the role flavor plays in all of our lives, inspiring flavorful conversation, and giving back to communities around the world. They asked me to come up with my own Root Beer Concentrate recipe…and clearly I was not going to make a plain old root beer float.

They gone?….Alright then. Dudes, we’ve gotta unite. Time is definitely running out and ours is the last generation before the unthinkable so I’m talkin’ all in and balls out on this one! I’ll get right to the point:

You heard me. Some of you guys love to shove it in their mouth anytime they ask for it but I’m telling ya, you’ve gotta start thinking about the rest of us here. This planet ain’t getting’ any bigger and with the way that the world population keeps growing, things aren’t looking good for us Male Meat Meisters. You’ve gotta face the hard facts and accept that Mother Earth has topped out on cattle production, i.e., those four legged steak factories. The world’s bovine fart chart is way in the red and it seems that methane and the ozone get along about as well as Donald Trump and Rosie O’Donnell, and we ain’t getting’ anymore cows but we’re gaining a bunch‘a new meat eaters everyday.

Fast Food Review: Taco Bell's Cantina Steak Burrito


I’m an unabashed Taco Bell fan. It’s in my rotation of Friday night takeout options and I even braved the wilds of Orange County for the opportunity to visit their test kitchen and see where the magic is made. I’m pretty regular in my routine. I usually stick with a basic burrito, maybe a taco and almost always a beef Baja Chalupa, although I do occasionally swap it out for the not-on-the-menu-but-available-if-you-ask-nicely Volcano Beef Chalupa.

I have to take my hat off to them for the success of scientific breakthroughs like the Doritos Locos Taco, though that sort of thing always struck me as gilding the lily a bit. But what about a new product line that wasn’t a gimmick—one that stressed high-quality and fresh ingredients? That’s where the Cantina Steak Burrito comes in.

Taco Bell’s introduction of the Cantina menu was intriguing. A trip to your local shopping center will make it clear that Taco Bell is facing competition, so it was only logical that they would fend off the challenge and take advantage of the public’s desire for a more sophisticated option. So, after seeing my wife order it on a few occasions, it was time for me to see if Taco Bell had found the sweet spot between their affordable options and the higher-end products offered by its fast casual foes.

Movember Eating: Top 10 “Manly Mo Foods”

Happy Movember! Don’t get me wrong—I’m excited for Thanksgiving, but this is important too. The Movember campaign raises awareness of men’s health issues (particularly prostate cancer and testicular cancer). Ladies have pink—us men have something a bit more permanent and…natural. That’s right, a mustache. 10. Deep Fried…Anything?

Really—what isn’t good deep fried? Pickles, Twinkies, hostess cupcakes (so sad, I know), snickers bars, even butter. I really don’t think there is much that is not better when battered and fried. Men enjoy fried foods—we all do. But more than that, odds are you are eating it on a stick and getting messy.

9, Meatloaf

Elf has his main food groups, while us men typically enjoy our own three: meat, beef, and beer. Don’t ask about the logic, just trust me that it’s there. I love meatloaf. What’s better than tossing meet together, baking it in the oven, and slathering ketchup over it? Well…maybe Katt’s recent turducken of meatloaf concoction (which I’m pretty sure includes at least two of the three men’s food groups). (Note from ML: MAAAAAAM! THE MEATLOAF!)
