Food Bloggers Give Panera’s Menu a Gluten-Free Makeover

Remember the team of activist food bloggers who took our list of America’s Top 10 New Sandwiches and made vegan versions of each sandwich? Well, Namely Marly and her team are at it again. This time, they’re giving one of America’s biggest bakery chains a GF makeover. Namely Marly writes:

I recently met a friend for breakfast at Panera and was surprised, nay shocked, to learn that they didn’t offer any gluten-free items at the bread bar. How could this be? Are they not aware of the growing number of people who are flocking toward gluten-free lifestyles?

The solution? De-gluten-ize the whole place! Namely Marly and her crew came up with gluten-free recipes for nine different items on the Panera menu. But will the bakery chain add any of these creations to their roster? Your move, Panera.

Always Do a Lap Before You Commit

Hallelujah! My neighborhood far mar, Mount Pleasant Farmers’ Market, is opening this Saturday. I’m working there the first day and cannot wait to be surrounded by spring’s fresh vegetables. But I just couldn’t wait and headed to FRESHFARM’s Dupont far mar this past Sunday. A little sneak peak, if you will.

I listen to Cher and always do a lap before I commit (see last quote), checking options, quality, prices and variety around the far mar. I selected the spring staple asparagus, as well as spinach. And then I made my one out-there purchase: peppercress. I’d never heard of it before. My rule at market is if I haven’t heard of it I’m allowed to buy it and will try not to buy something else that I’ve already discovered.

I tasted the mirco-green and holy crap, it’s like eating horseradish. It has that fantastic harsh heat, sort of like a radish as well. I was stoked but wasn’t at all sure how I’d like to use it. And then I went with my standby: whiz it into a sauce.

Four Things to Freeze Before Vacation

I just got back from Chicago for a quick birthday vacation. Besides packing plenty of warm clothing and deciding on restaurants: iNG, The Bristol, The Publican, C-House, XOCO and Bari I also prepared my kitchen for a few days’ absence. But one more Chicago plug — Twisted Spoke, plenty of interesting, local and international beer, plus…inescapable ’70s porn. Enjoy a mustache with your Goose Island.

Anyway, here are some ideas on how to quickly prep your kitchen for a more welcome return.

Four Things to Freeze Before Vacation

1. Freeze Bread

There’s usually some sort of bread around my house looking for a quick toasting and buttering, or a nan looking for a dip in lentils. Either way, I rarely ever finish a package before its time is up. Before you see mold – and before you go away – toss the bread into the freezer. If you don’t have time for anything else on this list, this is the least you can do to save your food for future use.

2. Freeze Fruit

In this time before spring’s strawberries and summer’s, well, everything else, I’ve been leaning on the banana (especially in my double almond oatmeal).  I used to throw the whole banana in the freezer, peel and all. But soon the skin would blacken and turn slimy, and make the whole thing a mess. Now I peel the banana, slice it and throw it in a freezer bag. So far the banana hasn’t turned too dark. I added the frozen banana right into a new batch of cooking oatmeal, letting the banana warm up and soften into the oats. A frozen banana is also fab blended straight from the freezer with some Greek yogurt and topped with raw oats.

Labels are for Soup Cans

It is a question I’ve had to answer again and again.  If it doesn’t come up the first time meeting me (what tipped you off — the obviously thrift store jeans or the decrepit Earth shoes?) I know it still dwells in my new friend’s/coworker’s/grocery store checker’s mind. Maybe they open my fridge for another beer and encounter a meat drawer full of cheese. Perhaps they suspiciously eye my container of leftover tofu pad Thai.  Whatever sparks it, I always know it’s lurking below the surface like Jaws, if Jaws ate black beans instead of people.  “Are you a vegetarian?”

The answer, strictly speaking, is no. The answer, compared to most Americans, is basically, yes. I first heard the term flexitarian a few years back, and I actually suppressed a gag reflex.  Sorry ES, I know they once received a nomination for eater of the year, but I am not ready to unite my eating habits with the soy hemp pomegranate latte crowd. At a recent foodie gala thing, I overheard someone say, “I don’t know what I’m going to eat when I go home because this is my first Thanksgiving as a pescatarian.”  Cue aforementioned gag reflex, and accompanying eye roll.  I mean, come on, you could practically cut the sanctimony with a fillet knife.  Blech.

So, my answer, like most real ones, is, it’s complicated.  I like happy meat from happy cows and you likely won’t find any animal parts in my fridge unless my husband has a hankering for sausage on his homemade deep dish pizza.  One coworker dubbed all of my leftovers “nut-berry casserole.” But…I believe in hospitality, both giving and receiving, so I will eat (and enjoy) any lovingly prepared food, animal or otherwise.  Don’t knock the West Virginia pickled hot dog ‘til you’ve tried it.  And if the only place to watch the Illini game is Buffalo Wild Wings, bring on the hot and spicy wing platter.

I don’t think telling you how great vegetarianism is will convert you any more than telling you how often I go to church is going to make you a Christian.  But St. Camillus does have a fabulous 10:30 mass if you ever care to join me, and if you come for lunch afterward, I dare you to leave any nut-berry casserole, I mean Gado Gado, on your plate.

Super Bowl Grub: Sliders with Onion Marmalade or Tomato Jam

There are few things more American than the hamburger and the Super Bowl. The two are just meant to be together. And yet, if you’re having a crowd over for the big game, the last thing you want to do is have to slap a couple dozen patties on the grill and miss the game (or commercials).  I am a huge fan of prepping stuff beforehand, and it definitely sets a tailgating mood when you begin making hamburger patties at 10am. I use 90% lean ground beef, which can be a little tough to keep moist, but with these sliders, the stuffing and toppings help out in that department.

The ingredients, along with incredibly simple prep, are really what make these work.  As for the toppings, I am all for homemade ketchup and use it on many many things, but sometimes you need to up your game. This onion marmalade can be made beforehand and lasts about a week.

The Unfortunate Fungus Incident

One of my favorite foodie books (an ever-growing category if ever there was) is Hungry Monkey: A Food-loving Father’s Quest to Raise an Adventurous Eater by Matthew Amster-Burton.  My own 4-month-old monkey is still happily gorging himself day and multiple times each night on breast milk, and is growing steadily rounder as a result.  However, as a godmother to two just-turned-four-year-olds, I found myself nodding along with many of the book’s tales.

One moment that remains caught between the teeth of my memory is when the author describes how he spent hours lovingly seasoning and reducing a pot of split-peas and ham in order to disguise some leftovers  for yet another post-holiday meal.  After he finally perfects the rich green broth, he confidently places it on the table for his family’s presumed enjoyment.  His daughter inspects the bowl, smiles sweetly, and says something like, “But daddy, you know that I don’t like soup.”  That’s right.  Not peas, not ham, not green food.  No, she has determined that she cannot stomach an entire category of cuisine, an entire course.  Let me just say — I feel you, man.

I’ve Made Peace with Summer Produce

“You still have tomatoes?” I whispered to Julia as I scanned what was left at the Mt. Pleasant Farmers’ Market.

She knew I wasn’t referring to what produce was available a mere 30 minutes before closing, but rather that tomatoes still graced the market the first Saturday in November. “They’re from the hothouse, I think,” she whispers back, eyes squinting out of secrecy.

“They’ve all been picked at this point,” Julia guesses, as she only works the stand, not farms the land. (Not that selling vegetables—and making change without a calculator!—is easy on a weekend morning.)

I didn’t try one of the last quarts of tiny yellow tomatoes. I’ve made peace with summer produce. I’ve said my goodbyes. I bought the last of my tomatoes two weeks ago, roasting them in a low and slow oven, and letting them linger in my fridge for just a few more weeks.

Using them sparingly at first—a few in an egg scramble, a few right to the mouth, a few on toast—I now must act fast before mold wins them over.
