Now that we’ve been blending and freezing poptails for a few weeks we decided it was time to open up the….er bar, and put your requests to work.

First up is the Mai Tai.  Poor Trader Vic, here is yet another iteration on his classic creation. We figured everyone has been getting bastardly with his drink, that well, we need one to claim as our own.

We started with a Maui Mai Tai, from there we stayed true to keeping our poptails budget friendly by skipping the orgeat and kicking up the sweet and sour combination by going au natural with some fresh fruit. What we didn’t skip: the rum, more accurately, the three rums.

Endless Poptails: Lychee Sakitini

 

We might be breaking some sake sipping code here by freezing it. But, you’ve come with us this far into the series, why not continue down the rabbit hole where fantasies of Poptails freeze to reality.

This week we are getting cool and cozy with sake, some Lychees, a little bit of honeydew (to give the poptails more body for the sake to soak into) and a few raspberries for a garnishing finish. Wait a few hours and the pay off is there on stick. Enjoy!

Fig and Clementine Port Wine Poptail

Fruit and wine—in a popsicle? Yep—it’s a ménage a trios for the hedonistic foodie.

Hitting the blender’s vortex this week is some dry port wine, figs, clementine tangerines and honey. We’ve have to admit, it seemed almost sacrilege to be pouring wine onto the blades of our poptail regulator. But a nano second later “almost” turned into a 2-cup pour.

Cantaloupe and Kiwi Daiquiri Popsicles

Summer is here with all its mighty heat, and we are doing more than just cranking up the AC to stay cool. We are stripping down to the flesh and getting dirtied-up with some rum. Yes, we are totally talking fruit and Poptailing here.

If you’ve been with us from the start of this Poptail series, you know we are taking classic drinks and getting a bit topsy-turvy with them. Along with that we’ve tried to avoid expensive ingredients and stuck to the basics for the alcohol portions so you don’t have to choose between a Saturday night date and your boozy Poptail.

This week we’re claiming the daiquiri for some freezer fun. We’re ditching the cocktail umbrellas and pitching the curvy bottom glass. These daiquiris are getting a shake up and cool down in a popsicle mold.

This 4th of July we’ve got you ready to stay cool for your summer picnic, and to keep things patriotic we striped your cocktail cooler with Uncle Sam’s signature colors. Kinda.

The striping is a bit messy, but um, so was the test kitchen while mixing. That’s what happens Monday night when you’re mixing, shaking, testing, pouring, more testing—things get a little blurry. The result of that blurry-good-time is a Poptail stamped with our ES Double Seal of Goodness.

Endless Poptails: Cherry Apple Whiskey Sour

We ESers like our whiskey combinations and we’re betting you will too. Never mindful of the rules, this week we created a blasphemous bartending nightmare by skipping the shaker for some rotating blades. Yep, everything is headed for the blender including the whiskey. Um, please muffle all outraged screams until you have tried this. Along with the whiskey are some sweet cherries, tart apples and a lime to create a popsicle that will assist you with obtaining your daily fruit serving.

Endless Poptails: Cucumber Honeydew Margarita Popsicles

Grab some popsicle sticks, get the tequila and leave the drunk dialing to others. We’re turning our tequila shots into a frozen Honeydew Cucumber Margarita.

But before your fingers start strumming your keyboard with inquiries as to whether or not the alcohol portions are strong enough, let us save you time and say, maybe it is, but then again maybe not. Luckily poptails are highly adaptable. Your palate, your preference — pour and mix your poptail to suit your taste. Just remember there’s a reason alcohol won’t freeze alone. Stiff drinks are meant to be consumed by the glass, not by the bite. Our proportions here err on the side of tasty over tequila-y.
