Do you smell that? Yup…mushrooms again. We just can’t get enough! Still working on the large box of shitake and oyster mushrooms, the wife and I were faced with a decision: how do we finish all of these?! We already did flatbread and stroganoff, but wait – I married an Italian…PASTA! Done and done. While any mushrooms will do, I will say that the shitake and oyster mushrooms provided a distinct taste that went really with a cream sauce. Anyway, get out your favorite pasta and have at it, hoss!

‘Shroom Stroganoff

“SHITAKE mushrooms, that was close!” While I may not coin the phrase, I am coining the dish. As I stated, we have A LOT of mushrooms right now (shitake and oyster). In our quest to shroom-dome, we went to one of our go-to veggie dishes: Mushroom Stroganoff. When made right, beef stroganoff is considered a classic dish with a creamy and savory flavor profile. Of course, we’re all trying to be healthy in the new year, so why not replace the beef with mushrooms? Better yet – the fancy kind of mushrooms.

When we did this before, we would get the typical dark gravy from normal mushrooms with the subtle earthy flavor of mushrooms. This time, we have strong earthy flavors of the shitake and a creamy, almost sweet flavor of the oyster mushrooms. Together, with egg noodles and creamy goodness, we may not need to make beef stroganoff again! Try it out – you’ll even enjoy the leftovers.

4th of July weekend is upon us! As the most highly anticipated summer cooking holiday of the year (sorry Memorial Day and Labor Day, but you know it’s true…) it’s imperative to have your menu game on point. And I’m not talking just the expected hot dogs and hamburgers. You need some winning sides ready if you’re going to impress at that neighborhood BBQ or block party!

Stuffed mushrooms are one of my favorites appetizers or sides any time of year, because you can make them as heavy or light as you’d like them to be, depending on what you choose to fill them with. Plus, in the summer, you can even cook ’em on the grill! The cow-loving folks at the Texas Beef Council recently reached out to us with an especially inspired idea… next time you’re debating between making burgers or stuffed mushrooms, why not treat yourself to the best of both worlds and stuff a mushroom full of beefy, blue cheesy goodness?

So, I’m in a book club. But as any good book club going individual will tell you, these gatherings are really 90% focused on eating and boozing, 10% focused on actual literary discussion. Don’t get me wrong, I absolutely love to read and I’m really glad I have friends who share my delight in devouring and analyzing a good book. But I’m under no illusion about our priorities here.

This frittata was my contribution – I knew we’d have plenty of festive Sunday Funday drinks plus some indulgent brunch sliders, banana bread, pie, etc. so I figured I’d even things out with some eggs and vegetables. This frittata has absolutely nothing bad for you in it, and besides caramelizing the onions, the whole thing takes about 10 minutes to throw together and another 10 minutes to bake.
