Once upon a time, veggie burgers were merely a last-resort option for lonely vegetarians at BBQs or meat-centric restaurants that didn’t have a single other flesh-free entree. As we know, they’ve come a long way since then. Now, faux burgers are less likely to be be a poor man’s meat substitute, and more often something inventive enough that even a human carnivore would want to eat.

Sugar + Bacon = Pig Candy

Over on the ES Facebook page, we got a request in for a pig candy recipe. Well, ask and yea shall receive, ES-ers. Especially if it involves bacon and dessert. And yes, we will be putting this in ice cream later this week. Obviously.

1. Preheat the oven to 375F. On a foil-lined rimmed baking sheet (the sugar gets real messy) place the bacon strips about an inch apart. With the back of a spoon, press a tablespoon of brown sugar onto the top of each bacon strip. Now this is just your most basic recipe. To embellish it is really simple, just whisk the brown sugar with a little of whatever you want: cayenne, curry, ground anise, cinnamon, cocoa powder, black pepper…you get the idea.

The Next Pig Thing: Pork Belly Tacos

So. I’ve been in Austin for just about three months now, and I’m sure y’all are just DYING to ask me this one burning question: Emily, what is the best taco you’ve eaten so far?!

Well, I’ve dutifully done my research. Of course we have the classics: al pastor, barbacoa, chicken tinga. We can’t discount the ATX-ubiquitous breakfast tacos, with their myriad combinations of eggs, beans, cheese, chorizo and potato. Seafood tacos have made an appearance in my meals: grilled fish, spicy scallops, even shrimp katsu. Okay, I’m making myself hungry just by recounting all of these. Let’s cut to the chase. What is THE BEST?!

May I present… the DeliBelly from Tacodeli.

I’m not the only one who carries a torch for these amazingly flavorful pork belly tacos. Yahoo! recently named Tacodeli‘s DeliBelly as one of the ten best tacos in the country. That’s a pretty tall claim in Austin, where a taco stand lurks on every corner, but hey, they were on to something.

BEER: It’s What’s for Dinner (Numbers 3, 4, & 5)

Things are getting fast and furious in Endless Simmer’s quest to use beer in 100 different dishes. After an off-list detour for Corona cupcakes, we’re back this week and crossing three items off the agenda: beer cornbread, beer-marinated pork, and chocolate beer milkshakes!

Last week, I embarked on a beerfeast of epic proportions. My plans consisted of a four-course meal; each course cooked with beer and paired with a different beer. I got through my week mostly by dreaming up the menu: pork loin marinated in an IPA, mashed potatoes with a brown ale gravy, cornbread with a wheat beer, and milk stout milkshakes.

When the end of the week finally came around (and the drinking began) the menu got downsized a bit, quickly falling from a beerfeast to a dinner with some things made of beer, but not all the beers I wanted to make them with. The pork ended up being marinated in a brown ale, which the friend who brewed it proudly called a “piece of shit.” Mashed potatoes and gravy didn’t even happen, after I asked another drunken pal to peel potatoes and found that ending horribly wrong.

Fortunately, I made the cornbread in advance, and when I reached my peak in drunkenness later on in the night, I was still well able to whip up the milk stout shakes. And of course, while we were beginning our beveraging, we did brew an IPA. So in the end, I still had a fairly epic beer dinner, reaching a new record of three items from my beholden list.

Pimento Cheese, Sriracha, Bacon. Enough Said.

The folks at Noble Pig in Austin, Texas—home to one of Endless Simmer’s Best New Sandwiches of 2012—wrote in to let us know they’ve upped the ante for the 2013 race by creating a cheese sandwich that makes even our wildest grilled cheeses look downright tired.

Yep, it’s a pimento cheese sandwich, with, you guessed it…bacon. And they were kind enough to share the recipe for the sriracha-spiked pimento cheese that makes this thing golden.

Sweet Potato, Butterscotch, Bacon and Goat Cheese Quesadilla

Editor’s Note: Please welcome Renee from Attack of the Hungry Monster to the ES family. Renee is a self-taught home chef who loves coming up with new recipes — and she dreamed up the dish listed above and pictured below, so…yeah, she’s an ES-er.

I am so excited about being here I can hardly contain myself!  Endless Simmer is one of my favorite blogs.  I mean, come on, chocolate peanut butter bacon strips?  There’s no turning back now, people.

But let’s talk about my latest food fixation. The humble sweet potato.

Oh, it doesn’t look like much, but any fitness blog or magazine will tell you it is a nutritional powerhouse (which is like the coolest word ever invented). Nutrition aside, this baby is tasty.  It’s sweet and savory at the same time and that is my jam.

I’m also eating a lot of butterscotch chips these days. How good are those? So that led me to the obvious idea of combining the goodness of salty bacon with the richness of goat cheese, plus the sweetness of butterscotch and sweet potatoes (I’m kind of into weird food combinations…can  you tell?).

The butterscotch brings out the sugary side of the spuds, and the bacon and goat cheese play up the savory notes (think sweet potato pie with bacon and goat cheese). Basically, this quesadilla will blow your mind and tickle all corners of your taste buds.  Wait, do taste buds have corners?  I’m pretty sure they are round, so maybe not.  Metaphorical corners, then.

Brussels Sprouts. Bacon. Pizza. Yes.

I’m going to make a confession: pizza is not really my thing. Most of the time it’s just kind of… boring. Bread with sauce and cheese, big deal. You need to do something pretty cool with pizza to get my attention.

Here is an instance of one such attention-grabbing pizza. My friend Sarah is pretty obsessed with Martha Stewart (I mean, I’m a pretty big fan, too — holler, Martha!) Sarah saved a recipe for Brussels sprout & lemon pizza from the March issue of her magazine, and being a Brussels sprout lover, I was into it. It’s also cooked on the stovetop in a skillet, which intrigued me. So we went ahead and made our version.
