Endless Halloween: Zombie Head Brownie Bites

Eeek!!  The zombies have invaded!!

Ok, don’t panic.  You probably would already know if they actually invaded and the zombie apocalypse was upon us.  What they have invaded is my thought process as of late.

Any fans of The Walking Dead in the house?  I love love love it.  So, since the premiere is on October 14th, I thought I’d celebrate with some zombie treats.  Plus, with Halloween right around the corner, you should probably get crackin’ on making some zombie-themed desserts.

If you know anything about zombies (which I didn’t prior to TWD, which I take as the most factual representation..whatever), you know that to kill them, you have to destroy their brains.  For that you will need weapons.  If you follow me on Twitter, you probably saw that due to lack of tiny weapons in the stores I just had to make my own (more on that in a minute).

These are like cake pops…except, not on a pop..and they are brownies.  So, they are zombie head brownie bites.  Let’s do this thing.

When Inauthentic Is Delicious: Weeknight “Gumbo”

Ok, let me preface this by saying that this is not authentic gumbo.  No need to point it out to me.  I am aware.

I set out to make authentic gumbo with the brown roux and what not, but if you know anything about gumbo, it’s pretty labor intensive and time consuming.  That’s not my bag, baby.

I am going to tell you a little anecdote (if you can even call it that) from my week, so you get a feel of how I work in the kitchen.

I went to three different stores looking for fish sauce for this gumbo recipe.  Not sure why.  I read it in a cookbook, so I figured it’s important.  So, 3 stores and nothing.  Then my Dad found it and got it for me (love you, Dad!)  It was such a huge bottle of fish sauce, so I  suppose I was set for many future gumbos.

Except, I couldn’t get it open.  That dang top would not come off.  I guess this would be where an extra set of (not weak old lady) hands would have been beneficial.  Honestly, I probably could have gotten it open, but I have no patience or perseverance for such a task.  Don’t I sound like a fun person?

Long story short: no fish sauce made it into this dish.  So sad.  But true.

Po’boy 2.0: Shrimp Po’boy Pizza

Treat Yo Self: Chocolate Dipped Ice Cream Cookie Sandwich…on a Stick

Gosh, you have worked hard this week.

Yes, I know it was only a 4-day workweek, but you really killed it.

So, I made a treat for you.

Unfortunately my job did not require me to work very hard this week.  However, I worked very hard on surfing the internet, reading tweets, catching up with Honey Boo Boo (for shame) and ordering custom fit jeans (What?  They were on sale.).

So, really, whether you worked hard on actual “work” or if you just filled your time like I did, sometimes you do need a treat like this one.

Because it is the bomb 2.0.

You can customize this to your tastes and make a different sort of cookie. (Or use storebought. No judgments.) Use milk chocolate or use a different kind of ice cream.  It’s your treat.  Do what you wanna do.

Bring It On, Fall: Healthy Lobster Mac and Cheese

You know how I was complaining about the end of summer here?

I’m over it.  A couple more hot days and I was done.  Bring it on, fall. Bring on the crunchy leaves and cable knit sweaters.  Oh, who am I kidding?  Bring on the comfort food!

I’m probably going to upset some ES-ers with a healthified recipe, but I’m okay with it.  Because my jeans fit when I eat stuff like this.  And yours can too!

Now, this was my first attempt at lobster, and I was sort of intimidated, but it turned out pretty simple and doable (yay!)  I just used tails.  I’m not sure I could handle an entire lobster.  These tails were frozen because fresh lobster is not available around these parts.  Use fresh lobster if you have access to it, of course.
