
From App to Snack: Jalapeno Popper Popcorn
Fried foods aren’t really my bag. They smell, look and sound good..but they leave me feeling kinda crappy. Am I alone in this?
Well, I decided to remake an often-craved fried food in a slightly-better-for-you snack. Yep—I put the flavors of a jalapeno popper in my popcorn.
It happened and boy, am I glad it did.
Also, this popcorn has bacon. Do you need any more convincing to make this? I think not.
Jalapeno Popper Popcorn
serves 2
1/4 cup unpopped popcorn kernels
1 paper lunch sack
1/4 cup of light butter
salt
1 jalapeno, seeded and diced
3 tbsp breadcrumbs (I used Italian flavored)
3 tbsp crumbled goat cheese
1/4 cup of chopped (cooked) bacon (about 3 strips)
Pour your kernels in the lunch sack and fold it down twice. Place the bag in the microwave and cook for 2 minutes or until there is like 10 seconds between pops. You can skip this step and just make a premade bag of popcorn, if you like.
Melt the butter in a small ramekin (in the microwave) and add in the diced jalapenos. Spread your cooked popcorn on a sprayed cookie sheet and pour about half of the butter/jalapeno mixture evenly over the kernels. Sprinkle salt and the breadcrumbs over that.
Bake at 350 for 6-7 minutes.
Cook your bacon in the other half of the butter/jalapeno mixture. Then chop it.
Toss the popcorn, bacon and goat cheese in a large bowl and toss it around to mix. Add more salt if desired.

This is revolutionary. I can’t wait to try it…..for years I’ve been trying to perfect my popcorn but I never thought to try the baking method.
