Sensible Sports Snacks: Baked Taco Roll-Ups

Baked Taco Roll Ups

Are you finding that you are going to more get-togethers lately? That”s how I feel about fall.  When the weather is nice, people love to gather. And you know what?  When people gather…they eat.

So, if you have a few friends over for the big game (Go, insert relevant sports team name here!!) why not make them some secretly healthy taco roll-ups to fill their bellies?

They will thank you for it.

The Incredible, Edible… Ips

These days, people are really trying to watch their carbs yet somehow snack their faces off. I”m not criticizing at all—I, too, love a crunchy, salty snack but feel pretty guilty after mowing down half a family-sized bag of Cheetos in one sitting (and yes, whatever, that”s a thing that has happened in my past, let”s not dwell on it).

I usually stick to Pirates Booty and Terra Chips (although, really, how much healthier are those? I don”t know, better than Ruffles but it”s not like you”re eating a salad, let”s be real) BUT! There”s a new kid in town, and he”s made from… egg whites?!

Super Snacks: Banh Mi Waffle Fry Nachos

Banh Mi Waffle Fry Nachos

So, there’s like some sort of sporting event coming up soon.  I did some Googling and it turns out it is called the “Super Bowl.”  Huh.  Sounds like an excuse to make some fancy nachos to me.

I’m kidding. I know what the Super Bowl is.  And I know that nachos must be present.  Sometimes sandwiches are invited to the party, as well. These nachos are a reinterpretation of a banh mi, which is a Vietnamese sandwich of grilled meats and pickled vegetables.  But, since I have no bread in the house besides 45-calorie sliced bread (Thanks a lot, Sarah Lee, nobody does it like you, you know) and my pantry looks like a mystery basket from Chopped, I decided to do this thing.  I pickled vegetables.  That’s a phrase I’ve never uttered.  I also used my crockpot to make an Asian marinated pork loin.  Surely these things belong on waffle fries, sprinkled with cheese.

Yes, it was meant to be.

Cuban Sandwich, Meet Eggroll

Baked Cubano Eggroll

Well, I hope everyone had a super fantastic holiday.  With New Years right around the bend, I decided to make a fun snack for all of you to try.  I know, I spoil you so.

So, I love a good Cuban sandwich, sometimes called a Cubano, piled high with shredded pork, ham, Swiss cheese and pickles.  I love it so much, I wrapped it in an eggroll blanket, got it all nice and toasty and ate the hell out of it.  That’s love.

Without further ado, I present you with the Baked Cubano Eggroll:

From App to Snack: Jalapeno Popper Popcorn

Fried foods aren’t really my bag.  They smell, look and sound good..but they leave me feeling kinda crappy.  Am I alone in this?

Well, I decided to remake an often-craved fried food in a slightly-better-for-you snack. Yep—I put the flavors of a jalapeno popper in my popcorn.

It happened and boy, am I glad it did.

Also, this popcorn has bacon.  Do you need any more convincing to make this?  I think not.

New Favorite Type of Potato Chip: RIB FLAVORED

Just when you thought the world of meat-flavored junk food couldn’t get any more exhilarating… may I present to you:

Baby back rib flavored chips from Zapp’s. What?! I know. I had never even heard of Zapp’s until I moved to the south, and now they are my very favorite potato chips (even before this rib-flavored discovery!) Made in Louisiana, they’re crunchy, Cajun-made kettle chips with all sorts of great seasonings and flavors—try the Voodoo flavor if you can get your hands on them.

These ribby wonders were discovered via my roommate Eric, who Tweeted about them (complete with Instagram of the bag, of course). We were both home at the time (“the Tweets were coming from INSIDE THE HOUSE!”) so I ran downstairs to sample the wares. Of course the bag was already torn apart and a bunch of chips devoured.

“Sorry,” shrugged my roommate Lisa. “I couldn’t wait to open the bag properly, I just had to tear into it. Literally.”

Fair enough! Wondering what they taste like? Well, kind of like BBQ flavored chips, but with a little more…salty, porkiness to them, I guess. Is it just a placebo effect? Whatever. The more meat-flavored snacks the better, I say!
