Cocktail O’Clock: Just Beet It
ES called beets in cocktails the next big thing way back in 2010, and sure ‘nough we are seeing them show up on drink lists coast to coast.
This one, from Poste Moderne Brasserie in Washington, DC, mixes up beets for martini lovers.
Just Beet it
1/2 oz. Grey Goose vodka
1/4 oz. lemon juice
1/4 oz. beet juice
1/2 oz. simple syrup
Shake with ice and strain into a martini glass with a beet salt garnish.

OK i’m totally trying this next time i have some vodka and beets. there may or may not be a tie-dye apron in my arsenal that i specifically bust out for the juicing of beets.

If you’re curious, I made a cocktail with moonshine and beet juice and brandy, based on the “shrub” category of cocktails:
Tiffany (I forget her last name) when she was at PS7 had a cocktail similar to this called the Bolshevik- it was beet infused vodka with fresh lime juice and (I think) a touch of simple syrup. So. Good.
