On Trend: Popcorn

The Fancy Food Show took place in Washington earlier this month and just like any other food event, influencers gathered to sniff out the top trends. Japanese and booze-inspired fare came out as favorites, as well as cherries and DIY kits. My favorite yield, however, is popcorn.

Manufacturers dress up popcorn in cheese, truffles and as a double-trend, bourbon, to turn this homely snack into a celebrity. But as high as popcorn climbs on the social ladder, it will always remain an innocent treat found on stove tops and in between movie seat cushions.

Happy Hour Kettle Corn, popping at the Cleveland State University Market, makes sure the good ole fashion snack continues to find happy mouths. Here’s a quick video of the making of kettle corn: 8 pounds of corn popped and seasoned in less than 3 minutes.

 

At the Root of It….

Summer is only halfway over and yet I am already seeing ads for school supplies. I lamented that fact to a friend and it got us talking about the relative simplicity of times when all we had to worry about was new classmates and teachers, purchasing Trapper Keepers and writing essays about what we did on our summer vacation. It’s a shame because it hasn’t been until recent years that my summer’s have been worth writing about.

This summer, in addition to a few vacations and long weekends, I have tried to take some trips right in my own kitchen. You see, earlier this year, our local grocer made a concerted effort to rotate in small amounts of “exotic”  produce that are typically not found in upstate PA. Because of this, I decided that each week I would purchase whatever was new and figure out something to do with it.

There seems to be little rhyme or reason to how each week’s produce is chosen and so my results have been hit or miss. At different times I have been greeted by  tamarind with its beautiful brown pod and fleshy fruit,  pungent salsify, dragon fruit and the kiwano melon (which looks like it is straight out of a 1970’s Star Trek movie). One of the more successful attempts I have had with this rotating produce experiment was when I walked in to find dozens of waxy, starchy pieces of yucca root piled high. While I had never worked with it before, my produce guy Brett said that it was similar to a potato and could be prepared as such.

Besting Bon App: Double Grilled Salad

I rarely like to write about recipes I read in magazines. I tend to think that if it passed the editorial muster of print publication, my skills of improving upon it usually fail. However, once in a while I manage to get it right and when I do, I like to share. I’m a giver like that.

A couple of weeks ago I had a couple of friends over for dinner. One of them is a picky eater — yes, I sometimes think to myself, why do I bother to have these types of friends at all, let along invite them over to eat? I was cooking chicken and I wanted a simple, but fresh and summery side, and I came across this Bloody Mary Tomato Salad in July’s Bon Appetit. I made this salad to the letter, and it was delicious, my guests loved it. But there was something not right. I gave it some thought and decided to make it again, this time over July 4th. Again, I was hosting, so I increased portions and changed it up some. And again, my guests loved it, all 15 of them. To see what changes I made, keep reading.

My Similarities with a Fox

My first meal on a weekend will never be a salad. Monday through Friday, sure, I’ll put together something healthy. Something with kale. Something with yogurt and berries. But all I want Saturday revolves around the difficult task of bringing eggs to the farmers market.

This Saturday Truck Patch farm only brought about 20 cartons of eggs; they usually have triple. I grabbed a dozen right away. Weeks earlier, when Brian the farmer didn’t show up with many eggs, he told me the reason was it was too hot. The chickens wouldn’t lay. And I was like, dude, I totally get it. I wouldn’t want to do much of anything in this heat, much less squirt out a fucking egg. I figured the same thing happened this week. But no. Another natural occurrence took place – a predator ate the eggs. Brian found broken shells.

I can’t blame that fox or coyote for lapping up all those runny yolks.

Luckily though, they saved some for me.

Food Bloggers Give Panera’s Menu a Gluten-Free Makeover

Remember the team of activist food bloggers who took our list of America’s Top 10 New Sandwiches and made vegan versions of each sandwich? Well, Namely Marly and her team are at it again. This time, they’re giving one of America’s biggest bakery chains a GF makeover. Namely Marly writes:

I recently met a friend for breakfast at Panera and was surprised, nay shocked, to learn that they didn’t offer any gluten-free items at the bread bar. How could this be? Are they not aware of the growing number of people who are flocking toward gluten-free lifestyles?

The solution? De-gluten-ize the whole place! Namely Marly and her crew came up with gluten-free recipes for nine different items on the Panera menu. But will the bakery chain add any of these creations to their roster? Your move, Panera.
