Cheflebrity Smörgåsbord: Life is Tweet for Rick Bayless

rick bayless tweeting

The latest and greatest news about celebrity chefs, served up buffet style.

– Funny, but if I was Tweeting when I should be busy doing my job, I’d be fired, not profiled by the Associated Press.  But then again I’m not Rick Bayless, and I’m not cooking for world leaders.

– All of a sudden, Rocco DiSpirito doesn’t seem like such a giant asshole!  At least he hasn’t tried to hire a homeless guy to kill his wife.

After the jump…go to school without putting on your pants, meet someone who watches more food TV than me and find out why Paula Deen is going to kill your kids.

Babies: Too Fancy For Their Own Good?

tyler florence

We’re always down for a good kid-people versus kid-haters food debate here at ES, whether it’s about child menus, kid-friendly cooking or hot dog design, so two items over at Good Bite caught my eye this week.

The first covers the growing debate about whether it’s kosher to take your tots to fine-dining venues:

It seems like the debate is separated into those who feel their dinner will be ruined by a crying child (and thus feel it’s an incredibly selfish move to bring a young child into a restaurant) versus those who want to teach kids restaurant etiquette and believe kids should be welcome in more formal dining venues.

What do you think? Is bringing your rugrats to Jean-Georges a great way to teach them about sophisticated food or a waste of your money and everyone else’s eardrums?

Which brings us to the second item — at least one celeb chef is firmly on the kiddies’ side:

You’ve heard of kids menus at restaurants, but have you heard of baby menus? Tyler Florence has recently released a line of baby food called Sprout and now he plans to serve Sprout in his three NorCal restaurants. What makes his baby food better? Florence says he “uses techniques like roasting to caramelize produce and bring out the natural sugars. The result is delicious, pure food.”

Hmm…I have to say that paying Tyler Florence to cook for your infant falls decidely on the “waste of your money” side of things. I mean, what’s next? Breast milk on the menu? Oh, right.

Iron Chef Jose Garces is firing up a taco truck and will be announcing its location daily via Twitter.  And there goes my productivity out the door.

After the jump…we get nostalgic about lunch and cartoons, and the latest news about successful people recognizing the accomplishments of other successful people.

Look Who’s Eating! Political Pundit Edition

David Brooks

ES’ edible paparazzi strike again…

Washington, DC: Maids and her colleague walk by BLT Steak.  Maids makes eye contact with David Brooks(!) who is just sitting there eating at BLT like it’s the most normal damned thing in the world for a famous political pundit to be sitting on the patio of a lunchtime hangout chowing down on fries and such.

Maids’ Colleague (new DC resident): Oh My God!
Maids: I know!
Maids’ Colleague: Those popovers look unbelievable.
Maids: Oh. I thought you were oh-my-godding David Brooks.

Wherever you are in the world, if you spy a famous eater, be a creep and send us your pics!

– The Beards were announced.  Big winner is Top Chef’s Tom Colicchio.  Lots of happiness in the TVFF household when the chef at Philly’s Osteria won for Mid-Atlantic.

– And the full run-down of Beard media award winners.  I’m sure ours is coming next year.

After the jump…we take a trip down to the mouth of The Mighty Mississip and we ponder if it’s actually “news” that Duff Goldman is in the paper for baking a cake.

Alice Waters Says…Eat Your (Organic) Garlic

GB-blog-alicewaters-520

Our friends over at Good Bite have an interview this week with Alice Waters, locavore extraordinaire, author of the new book In the Green Kitchen: Techniques to Learn by Heart, and all-around culinary superhero.

What ingredient does the average home cook need to make more use of these days?
Garlic – it’s the spice of life. It’s something you can’t ignore. Its presence makes a really big difference in the taste of food. And it’s of course, very very good for you.

What do you tell all the grocery store shoppers out there that are still buying the pre-chopped and diced garlic?
It’s a whole other world — that’s not garlic for me. Because garlic is something that changes very quickly, in the presence of oxygen, when it’s opened up, and exposed to the air, the flavor changes. And so, you need to cut it, and use it right away. Peel it, and use it.

Now, again, going back to the standard grocery store shopper. Being forced to choose between organic or local — if they have to choose, what do they do?
Well, I want both. And so I make a point of going to the farmers market, and if I’m at the supermarket, I go right to the produce director in the back, and say, where did this food come from? Where was it grown? When did it come into your store? Can I get it locally and organically? I think that the big markets want to sell, and if you say that you’re ready to buy, they’re interested.

What should every home cook go home and learn to do right now?
Make a vinaigrette for a salad. Just A simple little salad dressing. Rub that garlic in the bottom of the bowl, use a little vinegar and olive oil and you can make a salad.

More AW, on farmers’ markets, school lunch, and cooking tips, over at Good Bite.
