Fueling the Home Run Derby

It’s Monday. It’s hot. Work sucks. And you might still be hung over from those home-made margs 80 Proof has been bragging about. But I have two things to cheer you up: the Home Run Derby (ESPN, 8pm) and a great snack to go with.

Two-Tiered-Tex-Mex-Triangles

This creation can also be made the night ahead. You would make the Spicy Dip section first so it can set. On the day of, bring out the already made section and bring to room temperature while making the Avocado Dip.
Makes 2

Whole-Wheat tortillas – 6

Part 1: Spicy Dip – mash the following together
Sour Cream – one small container
Cream Cheese (bring to room temperature)
Cilantro – fresh and finely chopped
Parsley – fresh and finely chopped
Cayenne
Chili Powder
Ground Chipotle
Course Garlic Powder
Onion Powder
White Onion – diced
Scallions – snipped
Jalapeño – one diced
Kosher salt
Freshly ground black pepper

Part 2: Avocado Dip – mash the following together
Avocados - 3
Garlic – 2 cloves minced
Lime juice - to taste
Kosher Salt

Part 3: Assemble
Spread half of Spicy Dip on one tortilla
Place 2nd tortilla on top
(If doing night before – cover with plastic wrap and let sit over night)
Spread half of Avocado Dip on the first tier of the tortilla.
Place 3rd tortilla on top of that.
Repeat.
Let set.
Cut into 8 triangular pieces when ready to serve.
You may sprinkle some parsley, cilantro and scallions on top for presentation.
