Ultimate Summertime Cole Slaw

Let’s talk summer cookouts, specifically COLE SLAW. I love cole slaw in the summer. Like, looooove. I could eat a whole head of cabbage to myself if I put my mind/stomach to it. Maybe this is thanks to my Austrian/Hungarian heritage.

Or maybe it’s just because I make one of the best cole slaws ever. I want to be modest but oh well, the secret’s out, my cole slaw is the bomb! I get requests for this slaw all summer long. Make it for your friends and you will, too.

My cole slaw is so much better than anything you’d buy at a grocery store. It’s not creamy or heavy. It’s light and bright with a bit of an Asian flair. It’s healthy, it’s inexpensive (important when you’re making slaw for like 40 drunk & hungry people), and it comes together in seriously five minutes. And it’s full of avocado. That’s the real game changer right there.

Sweeten Up Your Usual BBQ… with Vanilla?!

Apricot Mango BBQ RIbs

Memorial Day Weekend is HERE! Thank god for my first official three-day weekend of 2014. I don’t know about you guys, but it’s not a true holiday weekend with out some solid grillin and chillin. I’m going to my friend Katie’s BBQ on Monday and I was brainstorming what I want to contribute when a press release from the peeps at Nielsen-Massey, announcing new BBQ recipes incorporating their premium vanilla. Vanilla as a meat seasoning?! A bit outside the box for me, but their recipes do sound ultra delicious. Give this one a try.

This Week at the Farmers Market: June Strawberry Salad

I spent Father’s Day weekend with dad at my parent’s country house near the Adirondacks, mowing, weeding, trimming overly eager tree branches, sweeping out the cobwebs, vacuuming the pool, and generally sprucing the place up in anticipation of summer. After our hard work we treated ourselves to a some fresh produce from the neighboring farms… not sure if you’ve heard but strawberry season is in full swing and THANK GOD, because strawberries are one of those fruits, like melons and blueberries (coming soon!!), that are basically bland and tough in the off-season. But holy mother, in June there’s nothing better.

Of course, juicy strawberries are superb on their own, topping off ice cream, boiled down for homemade jam, or baked into a pie. This weekend it was effing hot and I didn’t feel like turning on the oven, plus I wanted to try something a bit more savory to go with our dinner of grilled salmon. The farm stand down the road also sells local cheeses, meats and greens, so we picked up a bag of big, leafy spinach, and a small wheel of goat cheese, wonderfully named “Purple Haze,” and this salad was born.

Spring Forward to Summer: Chocolate and Salted Caramel Pudding Pops

Spring has just begun and I’m already fast forwarding to summer with these pudding pops. It’s hard to deny a chocolate and salted caramel pairing.  Especially one on a stick that is begging you to have a seat and enjoy the slow pacing a popsicle has to offer — that is if you can keep yourself from biting into it.

Incredibly easy to make and even easier to devour, you should have no problem whipping up a dozen or more of these in under 30 minutes. The hardest part will be waiting for them to freeze. Let me say that if you’ve never had a pudding pop, well it’s a lot like a Fudgiscle but better and richer.
So relax, enjoy and yield to the slow pace of licking a popsicle.
