Always Listen to the Simmer

popcornlung.jpg

A few weeks back, our intrepid reporter Edouble told you about the joy and simplicity of popping your own stovetop popcorn. And I quote:

“I must insist that you stop buying microwave popcorn and that you start popping it yourself on your stovetop…This literally takes all of four or five minutes to do.”

Easy enough, right? But did you listen to Edouble? Nooooo. You kept popping your cute little bags of Orvile Redenbacher, and now this man is dead.

OK, not dead, but stricken with a nasty case of ‘pocorn lung.’

“A Colorado aficionado of microwaved popcorn, one of the most popular types, may have developed a serious lung condition from inhaling the fumes emanating from the just-popped bag…the suspected culprit is diacetyl, which adds buttery flavor to microwave brands such as Orville Redenbacher and Act II. For 10 years, the ill man ate two bags a day and savored the aroma of the steam before diving in. Until now, the government and industry watchdogs have been concerned only about cases of what is called “popcorn lung” among popcorn plant workers exposed to synthetic butter. It has been linked to damaged lungs. But no one worried about the effects on the consumer.”

So please, people, listen to what ES has to tell you. Today it’s popcorn lung, but tomorrow you could be choking on pre-made piecrust, or suffering from avocado deficiency syndrome.

E-double’s posts about eating in Mexico inspired me to write a little more about eating in little mexico, a.k.a. Manhattan.

Hell’s Kitchen’s Leon Bakery is a tiny neighborhood secret – an increasingly rare statement in a town over-saturated with hyperactive restaurant bloggers constantly reporting news of venues that are rumored to be applying for liquor licenses in 2012.

Leon Bakery displays an impressive array of genuine Mexican cookies and pastries, but the real finds are towards the back – tasty lunch offerings that beat the hell out of Chipotle. Their fresh and fluffy corn tamales are unquestionably the finest you can get North of the Rio Grande, while my fav are the crispy sopes (above) – thick corn tortillas with raised edges, filled with refried beans, queso blanco and a paste made from spicy green chiles.

There’s always a bit of a mystery as the heat of the chiles varies day-to-day and at times the spiciness can kick your ass. The prices also seem to vary day-to-day, at least for gringo customers – but at either a buck or a buck and a half each, you won’t find a better deal without heading to Oaxaca.

Harry, Did You Stay up all Night Eating Butter?

As someone who went to binge-drinking summer camp college in Wisconsin, I have a genuine soft spot for the Midwest. No other region of the country has so fully mastered the ridiculousness, perhaps even offensiveness that is American eating.

But Iowa, you have really outdone yourself this time.  Allow me to present the real reason Rudy Giuliani skipped the Ames straw poll. No, he wasn’t scared of Mitt’s millions. There was a much more obscene sight there:  Harry Potter carved out of butter.

Oh, Iowa State Fair. I thought you had hit your glutoness peak when you invented the deep-fried twinkie. You weren’t even close.

The only problem is, what are you gonna spread all that butter on? If only we had a giant loaf of bread, or a chocolate ice cream cake, or some medium-rare steak to spread that fatty goodness on. The solution after the jump.

TFG
(What not to do)

Yes, after a glorious weekend down the shore, I’m back at the office.

Fuck.

And now that my incessant snacking on potato chips, red grapes, swiss cheese, banana and chocolate popsicles… is over, I have to go back to eating with grace.

Here are some tips for eating at the office:

Well, we did it. We hit 100 102 degrees today, by noon 1 pm. To celebrate, I am going to go cook lunch on the sidewalk…

And to think, when we were younger, we solved this heat problem by jumping in a pool.

Pop-pop-pop-pop-it-up!

Sorry for the cheesy title to this, but if you knew how I excited I get about popcorn, you’d understand. I must insist that you stop buying microwave popcorn and that you start popping it yourself on your stovetop. My momma taught me how, and now I’ll teach you.

First thing is to buy a bag of popcorn kernels at the store. Take a large pot (one that you would use to boil a lot of pasta), cover the bottom with a good layer of oil (I use olive oil for everything, but vegetable or other oil is just fine), and then pour in a layer of popcorn kernels that also covers the bottom. Put the lid on and turn your heat on high. When the pot starts warming up, pick it up by the handles and give it a swirl to move the kernels around. You’ll want to do this swirl (or you can just shake back and forth) every 30 seconds or so. Soon the kernels will be popping away. When the pops die down, you know it’s ready. Pour it in a big bowl, pour melted butter on the popcorn and mix in, salt to taste. This literally takes all of four or five minutes to do. I personally love to make it at 3am after the bars and before bed. BS can attest to that. It is really, really good! I’m gonna go make some now!
