We’re big fans of dirty martinis here at Endless Simmer, not to mention pickle-tinis, and pretty much any other way to salty up a cocktail. What we’d never heard of before was an olive-and-tequila concoction.

With National Tequila Day just around the corner (July 24, as you surely know), it’s about time to take a look at the Mexican martini.

This Austin, Texas speciality comes to us by way of Tex-Mex cantina El Original in New York City and we have to say this one looks worth trying.

Honeydew Cucumber Sour - Sanctuary on Camelback Mountain

OK SERIOUSLY?!? Four to six inches of snowfall in New York today…on the first day of spring?

I don’t care what the weather says, we are ready for some springtime drinks.

Here’s an enticing recipe that comes to us all the way from elements restaurant at Sanctuary on Camelback Mountain in Paradise Valley, Arizona, a place where I would really like to be right now, because I am pretty sure that it is not freaking snowing there.

Honeydew Cucumber Sour

· 1oz Martin Miller’s Reformed Dry Gin

· .5oz fresh lemon Juice

· 1.5oz fresh honeydew juice

· ¼oz  Clover Honey Syrup (here’s a recipe)

· 1 dash Regan’s No. 6 Orange Bitters

·Shake, pour and add sliced cucumber as garnish. Eff the snow.

With the rooomaaantic holiday of Valentine’s Day coming up this weekend, you might be looking for a decadent, indulgent, out-of-the-ordinary meal to cook for your special someone (or yourself, I don’t judge). For some reason, my mom would always make lobster for our family on Valentine’s Day, I suppose just because it’s a more “fancy” delicacy than your usual seafood. And I mean, lobster is delicious, so it’s a pretty solid choice! If you aren’t opposed to a truckload of cheese (actually if you are opposed to that I don’t even know why you’re reading this site) alongside your lobster, this could be the recipe for you!

Can’t even lie, this is not my creation, it came from my friends the Neelys. Their lobster mac and cheese is SO good, I don’t even understand it. I think it’s the use of gruyere alongside the white cheddar, plus the sweet paprika and lots of cracked black pepper… oh and the LOBSTER. I’ve made this twice for celebratory dinner occasions and it is a crowd pleaser to the millionth degree. To really kick things up, I like to add extra garlic, extra black/cayenne pepper, and an extra lobster tail for good measure. I also like to par-boil the lobster before adding it to the pasta, although the original recipe tells you to add it just straight up raw. I feel like the texture is better when the lobster is already cooked, but you can choose your own adventure on that one.

And YES, I realize the Neelys have filed for divorce and I DON’T WANT TO TALK ABOUT IT and the state of their love lives can’t ruin how magical and special this lobster mac & cheese is. The love between the Neelys may be gone, but the love between my mouth and this mac will never be diminished.

Yeah yeah YEAH SONS!!!!! This Sunday is the Super Bowl and the Seahawks are BACK, BABY! Loyal ES readers may remember that I am from Seattle and loooove me some Hawks and made this ultra-handy Super Bowl Snacks for Seahawks Fans last year, and that post still stands because OBVIOUSLY THE SEAHAWKS ARE BACK IN THE ‘BOWL.

Endless Beer: Top 10 Beers of Winter

Happy New Year, folks. Time to pretend that you’ll hold to those healthy resolutions and become a “better you.” I’m right there with you, as the fiance and I try out “clean eating” for a while. Except for beers — I will NOT stop drinking beers. Which is why I bring you our top ten winter beers of the season. Note that even though Christmas is behind us, those tasty Christmas brews are still available as well as the special winter seasonals. Get ’em while you can. Here ya go:

10. Sly Fox Christmas Ale

ABV: 5.5% (canned), 6.5% (bottled)

A leader in the beer canning industry, Sly Fox offers their annual Christmas ale. The ale is a very “spiced forward” brew with Cinnamon and Ginger at the forefront. Flavors of clove continue throughout, complementing a sweet malty flavor.

9. Victory Winter Cheers

ABV: 6.7%

For those of you that don’t enjoy a winter warmer or strongly spiced ale, the Winter Cheers is a tasty and sweet wheat that takes away some of the booze flavor associated with winter warmers.

8. Deschutes Brewery Jubelale

ABV: 6.7%

Jubelale includes the traditional Christmas spices, but then has a pleasant sweetness of caramel and toffee with fruity flavors of cherry and raisin. The award-winning brew is a solid warmer that gives you a nice warm feeling all the way down. A great brew for after a hard day’s work on the slopes.
