Duke's Clam Chowder

Top 5 Super Bowl Recipes for Seahawks Fans

OKAY. This Sunday is the Super Bowl to end all Super Bowls. Seahawks vs. Broncos. If we had a Denver writer on our staff, things might have turned out differently here on Endless Simmer today. But we don’t, we have ME, a ride-or-die West Coaster for 25/27 years of her life, most of those in Washington. This means we’re going to talk about Seattle-themed Superbowl recipes today, and you’re going to read it and you’re going to cook it and most importantly, you’re going to LIKE IT. Even if you aren’t a Seattle person, unless you’re a die-hard Broncos fan, your NFL team of choice is already out of the running so you might as well take this opportunity to embrace the glory of the Seahawks and just enjoy the ride.

Besides, Seattle has an embarrassment of riches when it comes to signature regional delicacies: salmon, shellfish, cherries, apples, craft beers, fine wines… need I go on?

For your Super Bowl XLVIII party, represent the great state of Washington with one (or all!) of these crowd-pleasing recipes, each showcasing one of the state’s beloved flavors. Even if you and your friends aren’t Seahawks fans, you’ll be fans of these snacks.

5. Duke’s Clam Chowder from Smashed Garlic (& originally from Duke’s, of course)

Duke's Clam Chowder

I know lots of people think that the East Coast runs the show when it comes to chowder, but I guarantee you the Pacific Northwest can give it a run for its money. Washington clam chowder is thick, creamy, and chock full of fresh clams. The two most well-known and beloved recipes are from Ivar’s and Duke’s chowderhouses. If you’re an Ivar’s fan, you can find their recipe online, too.

Anyway, most of the country is still cold and miserable, so a bowl of piping hot clam chowder (maybe even in a bread bowl?!) is sure to keep your party guests warm and happy.

4. Washington Apple Martinis from Santa Barbara Chic

Washington Apple Cocktail

Do people in other parts of the country know about the Washington Apple? When I moved to Austin, I was shocked to learn that most of my Texan friends had never heard of it. This was a staple of my college years—of course, back in those days, we drank it as a shot, not a cute little cocktail like this one. (I completely condone imbibing in either fashion!) While this boozy beverage isn’t exactly the same as a fresh, organic Honeycrisp apple plucked from a Washington orchard, it gets you much more drunk. And that’s important when watching sports.

3. Chipotle Cherry Chicken Wings from The Foodie Couple

Chipotle Cherry Chicken Wings

Why this recipe? The reasons are threefold: 1. Wings are a quintessential sports-watchin’ food. Everyone can agree on a good wing. 2. Cherries are one of Washington’s top crops – have you ever had a Rainier cherry? Delicious. 3. There are lots of cherry BBQ wings recipes out there, but this one is from a blogging couple in Tacoma, and you KNOW these people are rooting for the Hawks on Sunday. Credit where credit is due.

Endless Beers: Top 10 “Winter Rarities”

What’s a “Winter Rarity?” Well, you know those “seasonals” you like so much? Yes, they are great…but odds are they will be around next year as well. How about the ones that won’t be around? THOSE are winter rarities. The special treats that breweries bless us with once a year—only during that year. Next year, they’ll have at it with a tweak. I won’t waste my breath, but here’s one simple tip. These rarities are meant to be enjoyed, but not all at once. Save at least six and compare with the next year…and the next…and the next. Within six years, you’ll have six beers to compare against each other. Anyway…here it is.

10. Bell’s Black Note Bourbon Barrel Aged Stout (2013)

bells-black-note-stout

ABV: 11.5%

Bell’s brewery decided to combine the Exhibition Stout with the Double Cream Stout. The result is a delicious beverage filled with malty flavors of chocolate, coffee, and even some fruity flavors. As you can imagine, this is not for the faint-hearted. OH—did you noticed the whole “aged in Bourbon Barrels” thing? Yup. Find one…if you’re lucky.

9. Weyerbacher’s Althea (2013)

althea-final-outlines

ABV: 7.7%

With visions of the occasional sugar plum still dancing in your head, you’ll enjoy this brew. This is a dubbel style beer with notes of fruits coming through. Weyerbacher brewed this beer to raise Breast Cancer Awareness and donated one dollar per bottle to the cause.

Sons of Liberty: Single Malt of the North

SOLPic

Craft Whiskey. I’ve never heard of it until a box containing two bottles of Sons of Liberty whiskey arrived at my door. I’ve enjoyed the occasional bourbon, a scotch here or there, but I’ve never tried this kind of whiskey. Most people think of whiskey as the stuff they mix with Coke while clubbing. Others consider it the burning liquid that they would live with during the college years “as long as it gets the job done.” Well time to wake up, people!  Read on, while I enjoy a glass myself.

Sons of Liberty was founded by Mike Repucci after years of making wine as a family tradition and learning more about the spirit of whiskey abroad. Repucci started in finance and along the way, said “fuck it — I’m doing what I want to do.” The name came about during conversation with his friend about the American Dream. Sick of worrying about taxes, the man keeping you down, and the game we all play from 9-5, Repucci realized that Sons of Liberty encompassed a lot of that feeling. Wanting to “revolutionize whiskey,” he decided that Sons of Liberty not only captured his journey for the American Dream, but also the American tradition of whiskey. The whiskey is American—in a bold way that us northerners have grown to know and love.

Sons of Liberty crafts their whiskey using the malts yeasts used to craft your favorite beers. After all, as their website explains—“whiskey starts with beer.” For instance, their Uprising was created using the grains used to brew stout beers. Using chocolate malt, roasted malt and much more, the distillery created a recipe that brings out caramel, chocolate, roasted flavor in the whiskey.

Cabanero Wine

Now That’s a Spicy Wine!

Cabanero Wine 2

As we all know, my local HEB grocery store is a treasure trove of inexpensive novelty alcohol products and this weekend I stumbled upon the latest discovery. At first it appears to be just another bottle of mid-range cabernet sauvignon, but take a closer look. This isn’t cabernet, but cabanero. Yes, as this delightful wordplay suggests, this is wine infused with habanero.

Cabanero Wine Label

While I enjoy a nice, full-bodied red with my spicy BBQ or other red meat, I don’t know what I think about spicy wine itself. Obviously I love Fireball, which is semi-spicy, but that’s more cinnamon-y than actual heat. I’ve had pepper-infused vodka before and hated it. What to do!

Rob and I were strongly tempted to buy a bottle, but I sadly resigned myself to the fact that a habanero-infused spicy wine would give me instant heartburn. I saved the $8 and walked away. Sigh. If any of you spice-lovers out there pick up a bottle, make sure to drop a comment and let me know how it is! Olé!

Endless Beers: Bourbon County Brand Stout

GooseIsland_BCS2013

The holidays are over. Bring on the dark, cold days of gray. I’m still stuffed from the new year, but I have found time to explore the 100 Beers of Winter list. Of those 100, there are a few particular beers that stand out. The Goose Island Bourbon County Brand Stout doe so because it is so rare. This suds are brewed every year—but with different flavors and a different taste each year. It is a rarity worth picking up before they are off the shelves.

I’ve mentioned this drinking strategy before, but if you haven’t paid attention—you want to get a case. Half of the case is for you to enjoy now. Impress your friends with your brew knowledge, and enjoy every last drop. As for the other half of the case: store away in the cellar to compare with next year’s…and the next…and the next.

Cocktail O’Clock: Cucumber Gimlet

gimlet

If you’re anything like us, your New Year’s resolutions involve drinking…such as drinking more refreshing cocktails this year. Here’s a perfect one that Haru Boston dreamed up just for the season. This month they’re serving a cucumber gimlet, a rejuvenating drink made with fresh cucumber, lime wedges, cilantro leaves and homemade simple syrup. Oh, and vodka…I mean, it’s not that new of a year.

Cucumber Gimlet

3 lime wedges
5 cilantro leaves
1 pinch of cucumber, peeled & julienned
.5 oz. simple syrup
2 oz. Purity vodka
1 cucumber slice, for garnish

1)      Muddle lime wedges, cilantro leaves and cucumber with simple syrup in a mixing glass.

2)      Add vodka and ice and shake 8-10 seconds.

3)      Fill a rocks glass with ice and strain into glass.

4)      Garnish with a cucumber slice.

100 Beers of Winter

With New Year’s around the corner and the Winter season ahead, why not find resolve in a good winter brew? Hence I bring you one of my favorite lists: the beers of winter. I think this is one of the more diverse lists because it includes so many styles of beer: winter warmers, christmas ales, white IPA’s, Stouts (chocolate, vanilla, imperial, coffee, PEANUT BUTTER), porters, red ales, doubles, and so much more!
