The Endless Road Trip — San Diego’s Top 10 Eats: 3. Pacos
To be honest, I went to California with a mission to eat the best and craziest tacos I could find, and I like to think I succeeded. I won’t argue that scrambled eggs and pork belly are both awesome inside a tortilla, but I’ve definitely found the best breakfast tacos, ever.
I’ve already expressed my love for R Gang Eatery after they served me the <best tater tots ever>. But you know, after BS and I consumed an entire basket of fried potatoes and cheese, we just couldn’t resist ordering what sounded like the best breakfast item ever: pacos. That’s right, pancake tacos.
And I’m not talking pancake filling in a pancake folded like a taco, either (did you get that?) This is a straight up hybrid of: pancakes, omelets, and tacos. How? Pacos are scrambled eggs with bacon, sausage, and cheese, stuffed inside folded buttermilk pancakes, topped with cheese, and served with sour cream and pico de gallo. They’re best when all components are eaten together, sour cream and pico included. I mean, what’s a taco without pico?
According to the folks at R Gang Eatery, this originally started out on the menu as one big breakfast burrito. But to make them easier to eat and more palatable, they turned them into pacos. They were spot on: the pancake to scrambled egg ratio was perfect. And even though you’d think these would be mushy or have a weird mouthfeel, they were wonderfully light, and didn’t make me feel like I was clogging my arteries. I mean, it’s just pancakes and eggs, after all (and pizza is a vegetable).
I’m already considering buying a plane ticket to go back and have these for brunch. Hangover food doesn’t get any better than this. If only they had a taco truck…I’d hijack it and drive it to my backyard.

This looks so good. I want to get a ticket to San Diego, eat that, and come back. I’d be a happy man. Except, I think I’d be hungry for it again when I got back home! Yum.

I wasn’t sure I was reading the title right until I saw the picture and was like, wait is that? What is that? Is that what I think it is? And then had to read the rest of the post.
