America’s Best Drunk College Food

It’s that very special time of year when all of America’s college students put aside their textbooks to focus on a more pressing pursuit: who is best at putting a ball through a hoop. But at Endless Simmer we’re more interested in what they’re doing after the game. So instead of spending all week filling out some silly brackets, we decided to rank all 68 NCAA tournament teams by what really is the best part of college: the greasy, cheesy, meaty, ridiculously over-the-top local foods that you would ever only consider eating if you were in college, celebrating a win, and…well, drunk as hell.

68. Virginia Commonwealth University: Senior Bobble

A quesadilla kicked up a good few notches, with ground beef, peppers and crushed tortilla chips inside.

67. Kentucky: MegaHo Burger

This triple-decker burger can come complete with gravy, cheese, jalapenos, mushrooms, bacon, tomato, pickle and lettuce — don’t forget the cheese-filled tater tots on the side. Only ranked so low because we have not confirmed that you can eat this and still walk out the door alive.

How to Make French Toast for a Crowd

You really shouldn’t be surprised that I have another breakfast dessert. After all breakfast is the meal of champions right? Following that logic I’ve whipped up a sweet hand-to-mouth breakfast exercise that will build your biceps and get your day started right with some sweet goodness.

But let’s clear something up first — that’s no muffin. That, my culinary enthusiast, is an Apple Walnut French Toast served in a cupcake liner with a walnut and graham cracker streusel.

My idea was to make French toast for a large group without running two or three pans and trying to time it so everyone is served in unison. Now of course you can opt for a large French toast casserole, but the problem I have with those is the center is always soggy — and well, that’s no good. So I decided to scale things down for more even baking.

Result: Loveliness between the pleats. (I know — it’s a recurring theme for me). No soggy mess and pretty much no leftovers.

Small note – Almost any bread will do for this recipe. You can use a plain loaf like an Italian or French bread type or a flavored one like I did. For this recipe I used an Apple Walnut bread from one of my favorite local bakeries. Alternatively, if you use plain bread, a quick flavor adjustment can be made by using a flavored dairy creamer instead of regular milk or cream.

The Five Stages of a Bad Meal

Ed. Note: Our friend Alex, formally the food editor of DC’s Brightest Young Things, recently moved to Boston. While she’s mourning the loss of leaving the District (and her favorite margarita spots), she’s also learned how to identify her grief during unpleasant meals.

This year my fiancé planned a birthday weekend getaway based entirely around getting me a good meal at a well-known and well-regarded restaurant in Portland, Maine.  The meal started well enough with a gracious entrée to our table-for-two and a handwritten birthday note awaiting me. The menu was narrative, seasonal and with the help of our waitress, I settled on a roasted Pekin duck.

Unfortunately the dinner was a shit-show: appetizers were small, uninspired and under-seasoned; the lighting was so dim we couldn’t really see our food; and my duck—which was promised to be crispy—came out with pale, wet, greasy skin. When questioned about the lack of crispy-skin, the response was “the chef says it is not ideal to change it at this time…” What? We bagged the rest of the meal, skipped the traditional birthday dessert and were glad to see part of our dinner was comped.

While we were initially angry, this experience got me thinking about other bad meals I’ve had and how I’ve dealt with them. You can apply the Kubler-Ross 5 stages of grief to a dining experience. While I know some may think this is a tacky exercise, the 5 stages have been used on everything from America’s debt problem to failed efforts of picking up women, so yeah, this is happening.

The Five Stages of a Bad Meal

Denial

This tends to happen during the meal itself. You start second guessing yourself: maybe you ordered wrong, or maybe you don’t understand what you’re eating, or maybe your food is the only food that is bad and everyone else loves their food so you had better pretend to like it. You just can’t believe you’re not eating something delicious.

Anger

Much of the anger you feel during a bad meal is about blame. You blame the person who recommended the place. You blame the reviewer who gave it 4 stars. You blame the waitress who told you the duck would have crispy skin. You blame the person who chose it. Or if you chose it, you feel the hot pointed anger of your dining companions and it becomes a deep, deep shame.

Sometimes anger can be about revenge. Maybe you’re so angry you post a crappy review on Yelp, you blast out a few angry tweets and then spend years telling people to avoid the place you went to.

Top 10 Food Tattoos

I need another tattoo like I need a hole in the head. However, I have been racking my brain and searching for a kick-ass food tattoo. I have thought about a play on the phrase “in the weeds”; it is still evolving. I like peanut butter and jelly, but do I really want a permanent sandwich on my back side? I could probably cover both of my arms and legs with every food that I enjoy, but I’m not sure I want to be completely covered in ink. This is difficult. So  I’ve compiled a top 10 list from the flickr group Food Tattoos. Enjoy. Maybe you’ll get some ideas for your next tat. Is That a Banana in Your Cupcake?

After all the chocolate and beer desserts of last few posts, I thought I would lighten it up some and make something non-chocolate. You know, get back to basics like pie or cupcakes — better yet let’s just fuse the two for some banana cream pie cupcakes.

Let me say, it’s like finding nirvana between the pleats! On your way, you’ll find a vanilla cupcake stuffed with some banana cream filing and topped with some good ol’ fashion whip cream. To round it all out I rimmed the whip cream with some crumbled coconut and pecan graham cracker crust and then drizzled it with some caramel sauce — and done! Enjoy.
