Peanut Butter Toast Crunch Cereal Mug Cake

I know this looks weird.  It”s not exactly what you would think of when I say super rich and decadent peanut butter cake.  But that”s what it is, I swear.

Ever since my resolution, I have not been buying sweets.  It”s a sad time, folks.  Well, it was a sad time.  Until I rediscovered my love for microwave cakes.

I have two secrets I”m gonna let you in on.  This cake took me 1 minute to cook and like one more minute of prep time.  Also, it ended up being less than 120 calories (Obviously it depends on the ingredients you use; Mine was 112 calories–score!).

Oh, also.  You know how cereal is awesome?  I”m sure you know.  I may have bought three boxes of this goodness (I”m a weak human, folks, it”s true).

New Year’s Resolution: Eat More Healthy Poboys

You know what time it is.  Time to lighten things up.  Time to acknowledge our jeans are a little tighter after all the holiday treats.

Time for food makeovers.

I just got back from a New Years’ trip to New Orleans and had my first “authentic” shrimp poboy.  After 2 hours of waiting (1 hour in line to order and 1 hour waiting on the food–seriously), I was ready to dig in. Honestly?  I was kind of disappointed.  I’m not going to name the famous establishment in which I ate, but it definitely made me go “hmmm..”

Ahhh, the picture is beautiful, no? Unfortunately, the shrimp was bland and overly coated in dry cornmeal batter, there was waaay too much bread, and there was no remolaude sauce.  What?  Isn’t the sauce the whole point??

Sigh.

Well, I’m not eating that sort of thing anymore.  I’m cleaning things up.

The irony is, that this one was so much better.  Trust me guys.  I’m incapable of telling lies.

Well, I hope everyone had a super fantastic holiday.  With New Years right around the bend, I decided to make a fun snack for all of you to try.  I know, I spoil you so.

So, I love a good Cuban sandwich, sometimes called a Cubano, piled high with shredded pork, ham, Swiss cheese and pickles.  I love it so much, I wrapped it in an eggroll blanket, got it all nice and toasty and ate the hell out of it.  That’s love.

Buffalo Chicken Hasselback-ish Potatoes

Is there anything more perfect than a potato?

Maybe a potato oozing with bubbly cheese..

Or a potato covered in spicy buffalo chicken and tangy blue cheese.

Yeah, that’s perfection.

So, I took the idea of a Hasselback potato and made it quickly, because I have no patience for baking a potato in the oven.  I will sit cross-legged on the floor looking through the tiny oven window going, “C’mooooonnn, I am ready for a potatoooooo!”  Did I mention I’m a whiner?  Don’t you want to be friends, now?

So, I microwaved it.  And you can too!  Provided you have a microwave…if you don’t, I’m sorry.  Looks like it is oven viewing-time for you.  Or you could have some patience and find something else to do while it bakes.  I’m not that strong.

From App to Snack: Jalapeno Popper Popcorn

Fried foods aren’t really my bag.  They smell, look and sound good..but they leave me feeling kinda crappy.  Am I alone in this?

Well, I decided to remake an often-craved fried food in a slightly-better-for-you snack. Yep—I put the flavors of a jalapeno popper in my popcorn.

It happened and boy, am I glad it did.

Also, this popcorn has bacon.  Do you need any more convincing to make this?  I think not.

Shortcut Gingerbread Beignets

Howdy!  So, how’s everyone coming with those holiday gifts and such? I am being a big giant procrastinator this year, for sure!  I usually make gifts for peeps because 1) I like to get my craft on and 2) I’m super cheap.  That didn’t sound right.  I’m frugal.  Better word choice.. Anyways, I’ve only bought about 25% of my list (eek!) and haven’t made a darn thing yet.  Not panicking, not panicking…breathe.

Cheesy Pumpkin Stuffed Shells with Browned Butter Sage Sauce


Well, hey there Endless Simmerers!  Hope everyone had a fantabulous holiday last week and enjoyed copious amounts of leftovers.

I don’t know about you, but it is getting cold up in my neck of the woods.  Time for comforting, bubbly, cheesy foods.  AmIright?

Katt brought you some classic stuffed shells earlier this month, but now it’s time to get a little crazy. This meal was based purely on cleaning out the fridge.  I had some ricotta from my first attempt at ravioli making (not exactly a fail, but not exactly a win) and some pumpkin from Thanksgiving-y things.

So, this love child was born.
