Our boy Brit has been chowing on beetroot ripple ice cream and has not even told us about it yet. What gives!

As tasty as the beetroot ripple ice cream was, I recommend this as a palate cleanser before a meal, it’d be a disappointment as a dessert.

You definitely caught my attention with the roasted carrots and avocado salad, both delicious and a great combination. Refreshing too.
“Beets moving into ice cream”? Very intriguing. Freshly cooked beets, spiced with a little rosemary, are delicious by themselves or with salads. Never thought of beets “in” or “with” ice cream so I am curious…
