I’ve been waiting a YEAR to write this post! I made this brioche stuffing for Thanksgiving 2014… and I waited until now to thrust it upon the world. And oh yes, I will be making this stuffing again this year! Right after I finish this post, to be exact.

So I love Thanksgiving stuffing. Who doesn’t? I’ve got nothing against Stovetop, but I like to take my stuffing game up a notch. That’s where this brioche stuffing comes in. Why brioche? It has a high egg and butter content (mmm… butter…) which means it’s super rich, soft, and slightly sweet.

I stud my stuffing with caramelized onions, wild mushrooms, and a good dose of greens. Oh, and a lot of fresh aromatic herbs to make sure your kitchen/house smells amazing for all your Thanksgiving guests. I can’t wait to make and EAT it again this year!

Here at ES we obviously LOVE Thanksgiving. Mass quantities of turkey, gravy, stuffing, cranberries, pumpkin… what could be better?! Weeeell, okay, the only thing better than traditional Thanksgiving dinner is ridic Thanksgiving dinner. So This Exists: The Stuffing Bagel

This may look like an ordinary everything bagel but it is far from it. Bowery Bagels in Portland, Oregon now serves a STUFFING BAGEL, seasoned with traditional herbs and flavors to mimic the classic Thanksgiving dish. Stove Top is the Un-Potato: Stuffing Shepherd’s Pie

One of the first things I ever learned to cook was Stove Top stuffing. When my college roommate and I discovered Stove Top, we could not believe how easy it was to basically replicate the stuffing that our moms took so many hours making on Thanksgiving. Culinary skill-less as we were, even we could figure out how to boil water and butter in a dorm room hot pot, add stuffing mix, and fluff with a fork. Actually, I still haven’t figured out exactly what the last direction means, but I digress.

While I still make Stove Top for a late-night snack now and again, I’ve often wondered why it so rarely shows up as an ingredient, aside from the odd post-Thanksgiving stuffing pizza. But why not? I can think of many a meal that could stand to benefit from a tasty bread-and-butter mixture poured on top. First case in point: shepherd’s pie. While this is one of my childhood favorites, I barely make it myself because it’s such a pain to have to boil and mash potatoes before you even really get started cooking. Of course it’s great if you have leftover potatoes, but…I rarely find myself with leftover anything. So my newly invented version of shepherd’s pie subs out the potatoes and replaces them with a thick coating of stuffing. Give me one good reason why not.

10. Steak Poutine Pita — U Needa Pita St. Catharine’s, Ontario

What could be better than poutine, Montreal’s signature street food? How about throwing that poutine — cheese curds, fries and gravy included — on a pita, so you can actually eat it while walking down the street? Add some steak and you’ve got yourself one helluva sandwich. And yes, for the sake of U Needa Pita, we’re including Canada as part of America this one time only.

We’ve said it once and we’ll say it again: there’s no food so good that it can’t be made better by a trip to the deep fryer. Kudos to Melt for being brave enough to test this theory out on the monte cristo breakfast sandwich — honey ham, smoked turkey, Swiss and American cheese — all battered in beer and deep fried.

We’re officially placing money on Chile’s signature sandwich — the chacarero — to become the next bahn mi, and La Sombra‘s version is the most sumptuous one we’ve seen yet. Shiner Bock marinated sliced hangar steak topped with green beans, avocado, tomatoes, pickled cucumbers and spicy mayo, all on a thin, toasty bolillo.

As you may have gathered by now, we’re not exactly Thanksgiving traditionalists here at Endless Simmer. But stuffing is one thing we simply will not go without. (You gotta have something to soak up all those pumpkin martinis, right?) Of course, we’re not talkin’ bout plain old sausage-spiked bread stuffing. This one’s intended for leftover stuffing, but if you’re ambitious you can make it the day of. Rolled-up balls of stuffing are coated in panko (love that bread-on-bread action), then deep-fried. For a special surprise, toss your other leftovers (turkey, gravy) in the center so they ooze out when you take a bite.
