Sometimes you just want every flavor at once, you know? Late August is so hot and steamy that I can’t get enough fresh, fruity tropical flavors… pineapple, I’m looking at you! But it’s also hatch chile season in the southwest and these smoky, delightful lil peppers are everywhere, and everyone in Texas looooves cooking with them.

I had a beautiful Smithfield Teriyaki Marinated Fresh Pork Tenderloin and I was craving a Cuban sandwich, so I figured, why not incorporate the teriyaki flavors and give it a slight Hawaiian flair by adding some sweet grilled pineapple into the mix? Then I also realized I had a bunch of the aforementioned hatch chiles to use, and thought about how much I love spicy and sweet together… and decided to give my sandwich a Texas twist by whipping up a swiss & hatch pimento cheese spread instead of your traditional slice of swiss cheese.

Then I realized that these were going to be HUGE flavor bombs and made them into little sliders instead of giant sandwiches, which was a great choice. (I also realized that making sliders meant I could use my very favorite soft Hawaiian slider rolls, and who doesn’t love that?) These Cuban-Hawaiian-Texan pork tenderloin sliders have so much delightful texture and flavor going on, little bite-size morsels are perfect. And while they might sound a little cray-cray, they don’t take all day-day (ha) to make. Even though they taste complex, they took me under a half hour from start to finish! Serve these alongside a cool, crunchy salad for a summertime dinner, or maybe as an app at your next cookout.

Rio Rooftop Fried Chicken Slider

Sliders aren’t bad for you, right? I mean, they’re teensy versions of sandwiches/burgers. Or, in this case, not-so-teensy.  The good people at RIO Rooftop Bar in Austin took a giant chunk of white meat chicken, deep fried it, then stuck it on a fresh, ultra-buttery slider bun slathered with bacon jam and topped with roasted garlic aioli. They also stuck some arugula salad in there, but let’s be real. Fried chicken is clearly the star of the show here.

I couldn’t even open my jaw wide enough to get everything in one bite. But they called it a slider on their menu, so that’s the story and I’m stickin’ to it! I mean, this isn’t a fullsize sandwich, so it’s basically health food.

Shouldn’t Work But Does: Hawaiian Pizza Sliders

I’ve been thinking about Hawaiian pizza lately.  How weird is it that pineapple, ham, cheese and tomato sauce would get together and make it work?  It works, though.

So, I cracked my knuckles and did some research on Hawaiian pizza.  Ok, I just went to Wikipedia—whatever.  So apparently it is not a Hawaiian invention and it is the most popular pizza of choice in Australia.  Huh.  Who knew?

I know one thing.  This flavor combo goes beyond pizza.  I have made a Hawaiian pizza grilled cheese that was the bomb-diggity, so I figured it would also be an awesome burger.

Super Bowl Grub: Sliders with Onion Marmalade or Tomato Jam

There are few things more American than the hamburger and the Super Bowl. The two are just meant to be together. And yet, if you’re having a crowd over for the big game, the last thing you want to do is have to slap a couple dozen patties on the grill and miss the game (or commercials).  I am a huge fan of prepping stuff beforehand, and it definitely sets a tailgating mood when you begin making hamburger patties at 10am. I use 90% lean ground beef, which can be a little tough to keep moist, but with these sliders, the stuffing and toppings help out in that department.

The ingredients, along with incredibly simple prep, are really what make these work.  As for the toppings, I am all for homemade ketchup and use it on many many things, but sometimes you need to up your game. This onion marmalade can be made beforehand and lasts about a week.
