Last night we heard from President Trump in a joint session. Trump brought up building our own “great, great wall”. Then we got to thinking – this is tame compared to what he’s said in the past! For the remainder of the speech, I thought about two things: (1) the ridiculous “trumpisms” made in the past and (2) what if food trucks were named after the “trumpisms”? And there ya go – that’s how you get through Presidential addresses. So after some good thought, a glass of wine, and the droning of politicians, we bring you the top ten food trucks (and slogans) Donald Trump would get behind.

Homemade Fluffy Pancakes

DSC_0157Weekend mornings lead to the best breakfasts of the week. Some indulge in eggs benedict, others an omelet, and of course the classic: pancakes. I grew up nearly expecting pancakes at least one day of the weekend every week. My family went so far as buying a griddle for the grill so that we could make an evenly cooked pancake out on the deck. Pancakes are the bomb. Mixes are good, yes. But did you know that you can make them from scratch with staples that every person (should) have in their kitchen? Yes.

Ingredients

  • 1 1/2 cups flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp butter (melted)
  • Cinnamon and/or syrup to your liking

Recipe

Okay, ready? Mix dry mix wet, combine to lumpy consistency. Cook on the stove until fluffy.

Yes. Wife and I went through enough mushrooms already that I can confidently say we are experts. The stinky veggie that leaves us all coming back for more: mushrooms. Mushrooms are a versatile veggie that can be thrown into pastas, pureed into soups and sauces, or be substituted as “meat” for our vegetarian foes. Anywho – here you have it: our top 10 mushroom recipes.

Whoa Baby! Fruit-Filled Dutch Baby for Breakfast

Didn’t we tell you that breakfast is the best meal of the day? Well if you didn’t believe us, maybe you will now. Adapted from Cooking Lightthis combination of funnel cake and pancake will satisfy anyone’s hunger. Bonus – it’s healthy! We filled ours with fruit. But think of the possible fillings: nutella, chocolate, homemade whipped cream, cream cheese icing, peanut butter, put chocolate chips in the batter…need I say more? Here ya go:

Ingredients

  • 1 tbsp cornstarch
  • 10 tbsp milk
  • 1/2 cup flour
  • 2 eggs
  • 1 egg white
  • 2 1/2 tbsp butter (melted and divided)
  • 1 tsp lemon rind

Recipe

  • Place 8″ or 10″ cast iron skillet in oven while pre-heating to 450 degrees
  • Combine all ingredients with only 1 tbsp of butter
  • Whisk for 2 minutes.
  • Remove the skillet when he is pre-heated and coat with cooking spray.
  • Swirl the rest of the butter on pan and add the batter to the pan
  • Cook for 20 minutes in a 10″ pan and 25 minutes in an 8″ pan

Fill with your favorite filling and enjoy!

Cookies are good. Yes, I enjoy cookies. When Christmas ended, I was at least happy to know that there were leftover cookies in the freezer. But that time has ended. No more Christmas cookies. Sad, I know. However, there is hope. For a long time, we would get individually wrapped biscotti in bulk for the ride to work. They were good. But then my wife starting MAKING biscotti. I will never buy individually wrapped biscotti from a big box store again. Biscotti baking is not complicated – just follow the damn directions!

Wifey can make vanilla bean biscotti, chocolate, chocolate macadamia nut, the list goes on. One of my favorites is what I bring to you: Dark Chocolate Orange Biscotti. Subtle hints of orange come through in the actual biscotti, all then dipped in a smooth layer of dark chocolate. What’s not to like?

Burns My Bacon: Cookie Dough “Restaurant”

AMERICA! Wake up! Holy eff. We just can’t help ourselves. Over and over, we find more ways to become self-indulgent zombies. This time, some genius in New York City decided it would be a great idea to open up a place that sells cookie dough. Cookie dough in a cone, in a cup – just raw cookie dough. Of course, they say it’s safe to eat because they used pasteurized eggs and “heated flour.” But really? Just…cookie dough? Like, the stuff I can make at home, have a bite, and then BAKE the rest of it and eat it in it’s more delicious form?

Some of you are probably thinking, “Are you crazy?! I’d buy that by the bucket!” Yes, I do understand the novelty of it and the fact that we all stick our fingers into the cookie dough and just eat it raw. Yes, it is delicious. However, is this the trend we want to set? First off, that any Joe can put shit on a stick and sell it in a restaurant? Let’s be honest, it does not take much talent to create cookie dough. Secondly, where is the value here? This is something that even a $1 bag of powder from the neighborhood A&P mixed with water will even taste good. If I go somewhere to eat, I want it to be something that I know (a) I can’t make at home and (b) it’s better than the rest.

Rather than marketing the cookie dough eaten raw from a cup or cone, maybe focus on the other products. Thankfully, they do sell things like cookie dough ice cream sandwiches, ACTUAL cookies, other BAKED goods, and even cookie dough milkshakes. Now those are things I would go into the store to try. But raw cookie dough in a cup or cone? Why?

Hey, what do I know? People line up for McDonalds, knowing the odds of spit landing in their food are greater than 50%.

Mushroom Mania : Oyster-Shitake Alfredo

Do you smell that? Yup…mushrooms again. We just can’t get enough! Still working on the large box of shitake and oyster mushrooms, the wife and I were faced with a decision: how do we finish all of these?! We already did flatbread and stroganoff, but wait – I married an Italian…PASTA! Done and done. While any mushrooms will do, I will say that the shitake and oyster mushrooms provided a distinct taste that went really with a cream sauce. Anyway, get out your favorite pasta and have at it, hoss!

Popcorn Gone Wild! Top 10 Ways to Amp Up Your Popcorn Game

There isn’t much better at the movies than a bag of popcorn with that golden, salty, liquid fat poured throughout the bag. Artfully attempting to get every kernel, we push that damn button and try our best to get the butter down the gaps of the piles of popcorn. YUM. However, it is never as good when you are at home watching a movie. That doesn’t mean there aren’t good uses for popcorn. If you are forced to make microwave popcorn out of the bag, here are our recommendations:

1. Make it the Good ‘Ol Fashioned Way

There is something special about stove-top popcorn. It sounds different while it pops and it definitely tastes different from the microwavable popcorn. Add in that it is cooked with oil with melted butter on top and salt to your liking – I’ll take this any day.

Why bother with picking between popcorn or candy? Or for that matter, having them separately? Put them together. A sweet and salty mix to the max, this popcorn could probably make a meal.
