Kale Avocado Salad

We’re deep into my salad season right now. You know that time of year – it’s so hot and sticky outside that I barely have an appetite after being out in the sun, and the last thing I feel like doing is standing over the stove. These are the days where a giant bowl of cool, fresh greens is the perfect light dinner. Added bonus: you’re eating super healthfully, meaning you won’t feel bloated and gross after your meal and you won’t dread wearing a tanktop in public. Win-win!

This recipe actually wasn’t created by me (gasp!) – it’s adapted from one courtesy of Saveur. Normally I wouldn’t bother following someone else’s recipe for a salad, for goodness’ sake, but this particular one popped up in one of my weekly Saveur email newsletters and I just couldn’t resist. After all, kale and avocado are two of my favorite foods. This dish is super, super simple, but it really doesn’t need anything extra. The luxurious creaminess of the avocado feels decadent enough to make this whole salad a treat, and the fresh citrus juices and soy are a lovely complement. It’s safe to say that I’ll be eating this a LOT for the rest of the summer… and beyond.

Kale and Avocado Salad

(adapted from Saveur.com)

1/2 cup fresh orange juice
3 tbsp. fresh lemon juice
2 tsp. soy sauce
1 clove garlic, smashed and chopped into a paste
4 tbsp. extra-virgin olive oil
3 avocados, halved, pitted, and peeled
2 tbsp. raw hemp seeds (optional) (note: I used ground flaxseeds instead and garnished with whole ones.)
1 bunch kale (about 3/4 lb.), stemmed and finely chopped
Kosher salt and freshly ground black pepper, to taste

1. Whisk together juices, soy sauce, and garlic in a bowl. Slowly whisk in oil; set dressing aside.

2. Cut 2 avocados into 1?2″ cubes and thinly slice the remaining avocado. Put cubed avocados, half of the hemp seeds, and kale into a serving bowl. Toss kale mixture with dressing and season generously with salt and pepper. Divide salad between plates and garnish with sliced avocado and remaining hemp seeds.

    from what I read, “massaging” kale gives it a better texture, wilting it a bit! never tried though, have you?

    Tamara – I’ve “massaged” kale before, and yep, it does help to break it down a little bit… but I don’t really think you HAVE to. What I usually do is just make sure to toss the kale really well with whatever I’m using to dress it, as the acid (lemon juice, vinegar, etc) is what breaks down the kale fibers. A good pair of salad tongs usually does the trick!

    I’ve found I “massage” if I want to eat immediately, but let the lemon do the work if I can let it sit for a little while..
