slice and dry them with a little salt in an oven. I buy bags of dried shallots in Chinatown they are awesome as a dip added to sour cream or youghurt, stews, soups, stir frys. Sprinkle on mashed potato as garnish, sandwiches—you get the point.

I was going to suggest the same thing as Steve! My mom prepares them a little differently though. She super-thinly slices them and then fries them on a medium heat, stirring constantly and keeping a very watchful eye to make sure they don’t burn. She keeps them in a jar– they last for a while and are used mostly in soups. So yummy!
