Cracklin Hush Puppies by Whitney Otawaka
½ finely minced onion
2 cups cornmeal
1 cup AP flour
2 tablespoons sugar
¾ tablespoons baking powder
2 teaspoons salt
½ teaspoon cayenne pepper
1.5 cups buttermilk
2 eggs
1 cup pork craklins or bacon
Mix dry ingredients. In a separate bowl, mix wet ingredients. Combine. Mix in onion and cracklins or bacon. Use 1 tablespoon of batter per hush puppy. Deep fry at 325 degrees in neutral cooking oil such as canola or peanut. Drain briefly on a paper towel. Garnish with honey.
