    This is one of my cousin’s creations…pretty bad ass! Here is what he says:

    I took a good quality olive oil (kalamata actually)and mixed it with maldon sea salt, and N-Zorbit M powder. N-Zorbit M is a tapioca maltodextrin derived from tapioca that is designed to have a very low bulk density. It is used commercially to increase the volume of dry mixes and frozen foods. This powder dissolves when it comes in contact with any aqueous medium but stabilizes any lipid or high-fat ingredient and then can be transformed into a powder.

    I simply didn’t let it go all the way to the powder stage. If you get the oil to maltodextrin ratio just right, you can form it into any shape you want! After my partner and I formed each one by hand, we toasted the outside with a brulee torch which gave it the appearance of a crouton. Making 150 individual ones is kind of a long, tedious process, but entirely worth it in the end!

    It was for a dinner that he had to create and run for a fine dining class at culinary school.
