Gridiron Grub: Bye Week

Some of you may be familiar with the concept of a bye week in sports. During the season teams get a week or two without a game scheduled to relax and recoup. Practices are minimal and they get to spend time at home. This week is the first bye week in the NFL and it coincides with one year of wedded bliss for Wifey and I.

Wifey is well aware of my sports addiction and was even okay when we scheduled our wedding so that it would not conflict with any major PSU games. Because of her patience with me in this, and many other matters, we had some quality time planned this weekend.  I also thought it would be a great opportunity for me to slack off and have my own bye week by opening up Gridiron Grub to all the ES readers.

Here at ES, we do love our pizza and have talked about it many, many, many, many times, but it is a classic football party food so next week it is my turn to try a riff on it.

This week however, we want to hear from you. What are your favorite pizza combos/recipes?

    congrats on #1, nice game plans..keep going JOE PA..still remember sitting on the nittany lion before most of you born…….crazy,31 with mine and she loves sports as much as me

    I’ve been cooking down the fridge with my recent take on pizza. But I’m not sure if this counts, because I use a whole wheat tortillas as my base? I dump whatever I have on it: thinly sliced fresh tomatoes, various types of cheeses (let your imagination run wild here), and any kind of veggie. Broccoli is my fave in the oven. Green onions have been just about perfect on all combos as well. I just throw the masterpieces into a 400degree oven until the cheese is oozy and the edges are crispy. It’s gotten me through some rough weeks at work where I haven’t had time or energy to go all out with dinner!

    More recently, over the weekend, we went camping. I had every intention of using my new pie iron (http://www.rei.com/product/752497) and brought ingredients to make pizza hot-pockets, but got way too lazy so they’ll have to wait til next trip!

    Love the Pie Iron! I’ll also suggest with some basic veggies and tortillas that a “lasagna” is quick easy and incredibly delicious
