Return of the Dark Side
There’s a new health craze sweeping the nation. Well, ok, it’s really just sweeping our apartment. We have decided to forgo anything that might resemble a healthy snack.
For a while there, Gansie and I would slice up an apple, maybe throw in some cheese if we were feeling crazy. Whatever was bought that week at the farmer’s market was fair game. Fine, this is a bit of an exaggeration, I still ate my chips and salsa at least 8 times a week and it’s not like we were on the South Beach diet or anything. But recently we’ve really tilted back to the dark side… and have become obsessed with frying our own tortilla chips.
There is obviously nothing complicated about the cooking process here. Gently place a corn tortilla into pan of very hot veggie or canola oil. Flip every so often to get both sides nice and brown. Honestly, it takes about 1-2 mins for each tortilla. In the time it takes to make Gansie’s Special Guacamole (avocado, feta, salt and pepper), you can fry up your very own chips.
The best part? They are still warm and dripping with grease…mmm
those are effing beautiful. I toast tortillas in the oven but hadn’t even thought to fry them – I don’t know why – of course soaking things in oil is always the way to go!
although we haven’t done it yet, im sure you could season the tortillas when they’re fresh out of the oil: cumin, garlic salt, black pepper, chinese 5 spice, harissa …
