JakeSG Love and the Special Sauce

Our friend jakeSG graciously hosted a grill session back on Independence Day. My veggie pasta salad worked as a great side to his kick-ass charred chicken doused in his special sauce. He finally got around to sending ES the recipe…

jakeSG’s 4th of July BBQ Sauce

All measurements are done with my eye. Works best if made a day or two before, as it is better after sitting in the fridge for a bit.

Cut 1 onion into very small or thin pieces
(Optional: 1/2 jalepeno cut into thin slices)
Put in large pot with a few tablespoons of veggie oil and cook on med flame until onions are clear
Add crushed garlic to taste (about 2 cloves)
Salt + Pepper
Cayenne (to taste)
Paprika
Switch to low flame, keep stirring to avoid anything sticking to the pot.
Cook uncovered.
Heintz (obviously) Ketchup. At least 3/4 of a cup
1-3 cups of beer (Yuengling works quite well)
Honey to taste
Worcester sauce or a vinegar (apple works)
(Optional: add a splash of your favorite hot sauce for a bit of a bigger kick)

If you use more beer or need it to be thicker, add some more ketchup.

After a good few years of anticipation, I finally made it to D.C. institution Marrakesh this weekend, courtesy of Travis’ bachelor party. This Morrocan place is an event restaurant – speakeasy-style entrance to a cavernous space, sexy belly dancers, endless shots for the bachelor – but I was obv. most excited for the seven course meal.

While Marrakesh puts on a party and a half, I have to say I wasn’t blown away by most of the food. Some fairly standard couscous, hummus and baklava, with slightly more impressive lemon roast chicken and almond-honey lamb. The standout course was the B’Stella, pictured above in before and after mode. It’s the kind of loopy dish that would make you think someone had a few screws loose if they served it to you in their home, but a fancy restaurant can pull it off. Phyllo dough stuffed with chicken, egg, onion, nuts and topped with kilos of powdered sugar.  No utensils, just dig in and go.  A gooey, glorious mess. More pics from Marrakesh after the jump.

Tim’s Sloppy Seconds

(T&A View)

Our friends Tim (road food & beer) and Alice (can’t cook a fucking thing and endlesssimmer’s marketing director) just moved into a perfect one-bedroom, 2 balcony apartment. After a guided-tour, ogling at their view, and creating a dent in their wine and beer supply, Tim threw together a hearty, alcohol soaker of a meal with their limited haven’t been to the grocery store yet inventory.
