Booze Bites: Cupcake Pudding Shooters

I’m going to be blunt. You need this. So seriously, get to the store and buy yourself a bottle of Pinnacle Cake Vodka. Can life get better? Yes, I’m sure it can. But in terms of having a low-cal cupcake that can pull double duty as a cocktail — I don’t think so.

Plus, this is an easy-to-make, 20-minute dessert. Do yourself a favor and make a lot, because trust me, they go quickly. To shortcut the time even further, bypass making the chocolate shell and serve these in little shot glasses with wooden spoons and they will look just as fun and festive.

BTW — I’m kinda crazy for the whole line of Pinnacle vodkas, so don’t be surprised if you see a few more boozy bites using their stuff. No, I’m not a pitch person for them. I’m just fascinated by their flavor-infused vodkas — hello, butterscotch, cookie dough, cotton candy, marshmallow and whipped cream.

Cupcake Pudding Shooters

Ingredients:

Chocolate cups

  • 6 oz. chocolate, melted

Pudding shooter

  • 1 3.9oz Instant Vanilla Pudding
  • ¾ cup milk, cold
  • 1/2 cup Pinnacle Cake Vodka
  • 1/3 cup Godiva White Chocolate Liqueur
  • 8oz Cool Whip
  • 1 tablespoon nonpareil sprinkles

Instructions:

To make chocolate shells:

1. Melt chocolate. Using a small paint brush, cover the walls of form* and chill for 5 minutes. Remove and apply a second coat and chill once more. The chocolate cups can be made 3 days in advance and kept at room temperature or stored in the refrigerator.

To make mudslide pudding mix:

1. Place pudding mix and milk in a bowl and whisk to combine. Add in Pinnacle Cake Vodka and Godiva White Chocolate Liqueur and vigorously whisk to combine. Fold in Cool Whip until no streaks remain.

Assembly:

1. Fill a pastry bag with pudding mix and fit with preferred tip. Pipe into chocolate shells.

2. Top with sprinkles.

Notes:

  • Make sure to buy instant pudding. Do not cook and serve pudding.
  • The pudding shots can be made a day in advance. To avoid having the sprinkles bleed, do not place them on the pudding shooters until the day of.

    I’ll go and FINALLY try the cake vodka. I’ve been totally wanting to for MONTHS. And these little cups might have just pushed me over the edge!
    I think they have a swedish fish flavor too? Which sounds nasty… but still, interesting.

    I LOVE the Pinnacle line of vodkas! I use their whipped cream vodka for “Rootbeer floats”, I put whipped cream vodka with root beer or cream soda and it’s AMAZING! Thanks for adding another fantastic idea to my pudding shot repertoire!

    How did you coat the molds with chocolate? A brush? Did you pour the chocolate in, swirl it around, and then pour the excess out? Thanks!

    Hi Rebecca- I used a small brush to coat the molds. A little cheap painting brush from the craft store will work fine.

    Hi Taylor-To remove the chocolate from the silicone mold peel the mold down like while using a finger underneath the center of each well to push the chocolate cups up.

    Is there a reason to use store-bought pudding instead of making one? I guess the heat in the pudding to melt your chocolate shells if you were using those, but is there something other than that?

    Made these in 1oz. paper souffle cups instead of chocolate cups because I was in a hurry, and in place of the ubiquitous Jell-o shots. (A heavy drinking crowd at this party.) Although just the Godiva alone was around $30, once I pulled together the supplies they were easy, convenient, and delicious. Luckily I have other future uses for this liquor otherwise cost was high. Once the 1st person got past their looks, as they are not as pretty and appealing in white paper “ketchup” cups as in chocolate ones, they were ALL gone in 5 minutes with people begging for more.

    A TOTAL Success and my whole-hearted recommendation!! Thanks for the recipe!!

    Help! I’m in the process of making these for a party on Friday, and the chocolate cups keep breaking! I had 10 successes out of 24. I coated the mold with more chocolate to make it thicker, but more than half still broke. I used a mini brownie mold so they are square, but it’s still one of those silicone molds. Any advice?? I do not have enough shot glasses, though the jello shot plastic disposable ones aren’t sounding so bad at this point.

    I made these little tasteys for my 21st birthday party, they were the biggest hit!
    I did not use Godiva liquor and they still tasted amazing, (If you want to go about it that way u can use another 1/4 cup of vodka.) Unfortunately i could find a rubber mold for the chocolate cups, so I had to use paper mini cupcake holders, it was a huge pain and took a lot of time but the results were gratifying!
    Best recipe for this kind of fun! Also if you dont want to spend a ton of time on the chocolate, crumbled gram crackers tastes great to! I froze my mix and used it as an icecream bite cuz it was so hot that day! 😀
    This made me about 22 shots per batch.

    also, the best chocolate to use is semi sweet dark, milk chocolate doesnt mix very well. I also did a few butterscotch cups and those were delish!
