Carrie Bradshaw Makes Awful Decisions

I can’t even lie and say “it’s that time of year.” Because frankly, I’m always trying to cook with what’s in my house, it doesn’t matter if it’s the end of the year, end of the month or end to Bernie Sanders reading sob letters all day. Bernie Sanders for president!

This Sunday’s lunch kicked-off the eat-what’s-here trend. It’s called crackly bacon. And my house smelled of the cured meat all day. First off, I let the bacon sizzle in the oven: 10 minutes at 425 on a wire rack over a baking pan.

And then I started to reorganize my long-sleeve shirt drawer, deciding on what to fold and return to the drawer and what to give away, while watching the episode where the girls attend Steve and Aidan’s bar opening; and Bunny shops with Trey and Char for a new bed; and Samantha is a lesbian. Wow I miss Sex and the City. Honestly, though, Carrie should have never gotten back with Aidan. And Carrie should have never married Big at the end of SATC 1. Carrie makes awful choices. It might be why I haven’t seen SATC 2 yet. But please don’t tell me what happens. I will see it as soon as it’s out on DVD.

But before I could decide whether or not to donate that black and white graphic adventure shirt from Barcelona, it was time to cook again. I decided this was the year. 80 and I would finally party with our neighbors – we attended our building’s holiday party.

CRAFTS! CRAFTS! CRAFTS!

Long work tables lined the perimeter of the room. To the right, the food. Down the center and up the right, tables filled with Styrofoam balls, glitter pens, Elmer’s glue, red and green ribbon, markers, glitter, felt, wooden shapes of stars, triangles, ovals, circles, hearts and squares and reindeer and Santa cutouts.

It might have been the first time in recent history that I paid more attention to the crafts than the food, although the sweet potato pie was quite creamy and not sweet, just how I enjoy it.

Bacon and Bean Constructed Nachos

Cut the bacon into small squares with kitchen scissors. Stir around on a medium-high pan. When crisp, remove the bacon and place on a paper towel. Leave the fat. Stir around diced red onion and garlic in the bacon fat. After a few minutes, add in one can of black beans. Stir. Let the beans soften and absorb the bacon fat. Add crumbled feta. Stir. Add salt, pepper and white wine vinegar. Add fresh sage leaves. Incorporate all including the bacon.

In a cast iron pan heat oil and fry corn tortillas for a few minutes per side until golden.

Crack each tortilla into 4-6 pieces and place on long plate. Scoop small amount of bean mixture onto spoon, mush together with other hand so ingredients stay together. Add cohesive bean mash on each tortilla chip. Layer until the mixture runs out, about 10 tortillas total.

    Don’t bother watching SATC2. Really. I love SATC as much as the next girl, but it’s SO not worth it.

    This is the best way to make nachos. Some people might call it OCD, but it insures even toppings and maximum chip crunch. Nice work!

    yeah that is some serious commitment. I’ve never thought to personally arrange each individual nacho, but I do hate it when the proportions aren’t right. Almost bad as a burrito from chipotle that’s one bite of only sour cream followed by one bite of only beans followed by one bite of only salsa.
