I like smaller burgers (slider size abouts) so bacon works well on most of the burgers I like… but I agree that sometimes it just gets lost. On good size burgers (good being subjective to my opinion here), the smokiness, saltiness, all comes out to play nicely against a slice of tomato… mmmm…. damn it. I want a burger so badly.

Had bacon cupcakes and bacon cookies recently for the first time. Can’t say the bacon was lost or poorly used, though…

I agree, bacon on cheeseburgers gets lost! I feel like it gets sort of soggy. So if it stays crispy and tasty in egg salad, that sounds AWESOME!!! (to have on my meat day of course )

We went to a dinner introducing the new Farm Table at Planet Wine in Del Ray, and the chef led off with devilled eggs topped with some crispy pancetta.

Very similar application, and the cured pork definitely makes its presence known in great ways.
