After being a vegetarian for 20 years, I recently gave up veggies because I hated how sad they looked when I sliced into them. But, this recipe makes me want to go veggie again. I still love eggplant. So, it looks like you don’t even have to pre-cook the eggplant before putting it into the dish.
Very cool.

and for the chickpeas, what i liked best about them is that they gave you the feeling/texture of eating meat/something more solid.

I think eggplant is one of those things people assume they don’t like – I made the rollatinis for my brother and he swore he wouldn’t like it but ended up asking for it again…beautiful dish – I never would have thought of chickpeas but they look great

Eggplant is great, I had it recently on pizza. I made a sauce the other night and ended up throwing in a few cups of vodka, nice kick to that one.

This looks amazing. I’ve instructed my resident weekend chef that this is a must have.

I can honestly say that this was amazing food. I’d like to think it was all my sauce, but somehow I doubt that.

I still can’t fathom that I ate, and liked, eggplant.

Mmm, that looks good. Oddly enough, I just made a noodleless lasagna last weekend (I used polenta slices instead). I did throw in some hot Italian sausage for the sake of my girlfriend, who also seems to require meat with every meal.
