GM's reminds me of a neighborhood gastropub in Philadelphia's Mayfair neighborhood, called The Grey Lodge Pub. I'm a big fan of your website too. Lots of great coverage. Golden, yes. Crisp, yes. Flavorful...not really. I couldn't in good conscience call them frites when put up against the offerings from Granville Moore's, Brasserie Beck, or even Bistrot du Coin. The best comparison I could think of are the beautiful but dull fries you get from mass production. Those pictures were all candids, so any looks on any faces are of-the-moment. There were quite a few times when Flay was smiling and being very friendly with the audience, so I don't think that's a permanent look for him. And, for the record, that look on Teddy Folkman's face is the initial stage of a RaRay-esque rapture upon tasting Flay's preparations. Flay’s fries were really just there. Golden, yes. Crisp, yes.
