The Fruits of Your Labor

With one last weekend to show off your summer party food skills, here is a bit of a different take on the traditional guacamole.

Enjoy your day off

Feta and Tomato Guacamole

Gently mix together:
4 snipped stalks of scallions, diced and de-seeded one red tomato and one yellow heirloom tomato, 2 diced avocados, tons of cubed feta, lemon juice , sprinkle of cumin, and a generous dose of kosher salt and freshly ground black pepper.

Serve with tortilla chips (but not the gross “lime” flavored kind)

Fried Green Eggplant

As we may have mentioned a few times, the ES crew spent the past week at a beach house in the Outer Banks with 16 or so of our closest friends. 80 proof, gansie and I drove down together because we’re the coolest because no one wanted to hear us rattle on about our blog for 7 hours. And look! We even passed this swimming pool store that makes a pun on our blog name - I had no idea we were so big in the Carolinas.

In addition to such stressful tasks as foosball, lying on the beach, and mixing drinks, we obviously spent plenty of time talking about food and cooking. We have a whole backlog of stories to share, so I thought I would get the ball rolling with this outstanding recipe from our good deep-fried southern friend Thresher. He took the philosophy behind fried green tomatoes and cooked up some eggplant that is deliciously unhealthy enough to make Paula Deen go veggie. Recipe after the jump. FullDis - I guesstimated the measurements after watching Thresher cook it up.

Editors Note: This blog wouldn’t be possible without the musings of El, who was at the core of our food obsession beginnings. Although she had shied away from the blog spotlight for a while, she eventually gave into our demands that we feature her glorious and knowledgeable take on food. Welcome, El.

As one of the founding members of CC 508, and long time food lover, my first post will no doubt be a disappointment to ES lovers (most particularly the ES founders). I fully admit that I have committed a sin against ES’ cardinal rules: the big C-word. But I feel I must baby-step back into the kitchen after being a slacker for way too long. Now, on with the story…

I was born and raised on homemade macaroni and cheese, turning my nose up at anything coming from a box–-the epitome of CHEATING. However, necessity drove me to discover Annie’s when I was in college. The “organic” label made me feel I was not straying far from the comfort I found in a bowl of mom’s classic. Post-college I find myself vacillating between 100% homemade, and the ease of boxed Alfredo. Last night I decided it was high time to merge these two loves.

Back in the days before blogs became a part of the MSM, and BS and I (and 80 for that matter) were just lowly grunts at a political polling firm, I spent my work hours chatting about food — with my officemate, El. Okay, maybe things aren’t that different.

Regardless, she taught me the wonders of avocado, tri-tip steak, (can you tell she’s from California?!?!) and chicken salad with tarragon.

El created her dish with oven-cooked chicken and fresh tarragon, so you’ll have to pardon my lazy version. (*Alert* shameless plug:) Maybe she’ll even grace us with a recipe of her own one day.

It’s finally here! By popular demand, and by Gansie’s insistence that we not discriminate against people based on what genitals they were born with - the tastiest chef contest: male version. Thanks to everyone who suggested the potential candidates in the comments of the first food porn contest. We apologize if your favorite chef wasn’t included, but these men were picked not by the content of their character, but by the availability of embarrassing photos of them on the Internet.

For those of you who don’t waste every waking hour watching the food network, the contestants are, from left to right: beefcake Alton Brown, naked chef Jamie Oliver, dirty, dirty boy Anthony Bourdain, and Mario (can the Italians repeat?) Batali.

**News Flash** Martha’s Causing Trouble Again

Straight out of the British tabloids, it’s reported that Martha “hideous old crone, former jailbird” Stewart is trying to steal Nigella “sexy and interesting” Lawson’s husband, a rich, art collector.

It is also noted that Nigella carries mustard around with her where ever she goes.

Top Chef Recap: Episode 9 - The Ides of April

Many apologies for the late post on this one, as I was off inventing oreo-vodka concoctions on the beach. TC is taking another week off tomorrow, so there is room today for an update on last week’s shocker of an episode.

After the previous restaurant wars challenge was called a draw, Team April (the dream team) went up for a rematch against Team Garage, now re-branded with the much fancier ‘Team Qatre’ but still clearly the scrub squad. As you might predict, the first guys got as cocky as Team USA going up against Argentina.

The scrubs, as was noted in the last recap, have suddenly developed quite the team chemistry, with Ms. Sara asserting her dominance over Howie and whipping him into submission.

Pasta la Vista, Baby

When 80 Proof lived alone, he more or less ate pasta, with <gasp> jarred sauce, about 3 or 4 nights a week. Now that he has daily access to Chef Gansie, he hasn’t had a dinner of pasta in a couple months (not including my sides of pasta salad, of course.) So last night we ventured back to the days of pasta, but with no cheating - we made our own sauce.
